Originally founded as a collection of paper group of people, we grew to become the student’s social and environmental club known as GreenNova. This year, we became oikos Lisbon, part of a global community of more than 50 business Schools promoting

sustainability on (and outside) Campus. Our goal motivates us every day: To transform economics and management for a sustainable world!

🌱 *Meatless Monday is here again!* 🥣✨
This week we’re sharing a cosy, comforting and protein-packed recipe that’s perfect for chilly days and easy to whip up:

🍛 Chickpea & Spinach Curry
A warm bowl of goodness — 100% plant-based, full of flavour, and super satisfying.

*🛒 Ingredients (serves 3):*
- 1 can of chickpeas (400g)
- 2 big handfuls of fresh spinach (or frozen)
- 1/2 onion (optional)
- 1 tbsp olive oil
- 1 tsp curry powder
- Salt & pepper to taste
- Water or plant milk to adjust texture
- Cooked rice (for serving)

*👩‍🍳 Instructions:*
1️⃣ Heat olive oil in a pan and sauté chopped onion until soft (if using).
2️⃣ Add chickpeas and curry powder. Stir for 2–3 mins.
3️⃣ Add spinach and a splash of water. Let everything cook down for 10 minutes, until thick and creamy.
4️⃣ Adjust salt, pepper, and serve over warm rice.

💡 Tip: Add a squeeze of lemon or some fresh herbs for extra zing!

🌮 Craving something quick, tasty & plant-based? 🥑🌱
This week’s *Meatless Monday* recipe is here to save your lunch (or dinner)!

✨ Veggie & Bean Tortillas ✨
(serves 3)

🛒 Ingredients:
- 1 can (400g) of beans (black, red, or kidney)
- 1/2 onion 🧅
- 1/2 bell pepper 🫑
- A handful of cherry tomatoes 🍅
- 1/2 avocado 🥑
- Paprika & curry powder
- Olive oil, salt, pepper
- 3 ready-made tortillas 🌯

👩‍🍳 Instructions:
1️⃣ Slice the onion and pepper, then cook them in a pan with olive oil for ~5 minutes.
2️⃣ Add the beans, spices, salt & pepper. Cook for another 5–7 minutes, mashing slightly for a creamy texture.
3️⃣ Warm the tortillas in a dry pan or oven.
4️⃣ Fill each tortilla with the warm mix, then top with chopped tomatoes and avocado.

Today, I’m taking the Zero-Waste Challenge — can I cook without throwing anything away?

I’m using broccoli, cauliflower, carrot, onion, tomato and garlic.

The florets, stems, and carrot slices go straight into my stir-fry.

Peels, onion skins, and garlic ends — I save those for veggie stock later.

And the old leaves or bad bits? They go into compost.

Dinner’s done — and my bin’s still empty. Zero waste, 100% delicious!

🍌✨ Sweet tooth calling? Let’s whip up these Banana Oat Cookies, super easy, and made in the air fryer! 🍪

🛒 Ingredients:
- 2 ripe bananas
- 120 g rolled oats
- Optional: chocolate chips, cinnamon, raisins, or nuts

👩‍🍳 How to make it:
1️⃣ Mash the bananas in a bowl.
2️⃣ Add oats and mix until combined.
3️⃣ Fold in your favorite add-ins (if using).
4️⃣ Shape into small cookies and place in the air fryer.
5️⃣ Cook at 180°C (356°F) for about 10-12 minutes until golden.

That’s it! Perfect for a light snack, breakfast on the go, or a guilt-free treat. 🌞
