Fried Tofu with ala king sauce
- Tofu - Php 60
- Cornstarch - Php 17

- Vegetable oil - Php 30

- Medium Onion - Php 30 to 35
- Carrot - Php 30 to 60
- All-purpose floor - Php 39
- Milk/All purpose cream - Php 54
- Parsley - Php 20 to 44
Ingredients:
Tofu:
1 block extra-firm tofu, pressed and drained
1/4 cup cornstarch
Salt and black pepper to taste
Vegetable oil for frying
Ala King Sauce:
2 tablespoons butter
1 tablespoon olive oil
1 medium onion, diced
1 clove garlic, minced
1 medium carrot, diced (optional)
2 tablespoons all-purpose flour
1 1/2 cups milk (dairy or plant-based)
1/2 cup vegetable broth
1/4 cup chopped fresh parsley
Salt and black pepper to taste
Instructions:
1. Prepare the Tofu: Cut the tofu into cubes or bite-sized pieces. Press out any excess moisture with a paper towel or tofu press. Season with salt and black pepper. Dredge the tofu cubes in cornstarch, ensuring even coating.
2. Fry the Tofu: Heat enough oil in a pan over medium heat. Fry the tofu cubes in batches until golden brown and crispy on all sides. Drain on paper towels to remove excess oil.
3. Make the Ala King Sauce: In a separate pan, melt butter with olive oil over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic (and carrot, if using) and cook for another minute.
4. Thicken the Sauce: Stir in the flour and cook for 1 minute, stirring constantly. Gradually whisk in milk and vegetable broth, whisking out any lumps. Bring to a simmer and cook until the sauce thickens, about 5-7 minutes.
5. Season and Serve: Season the sauce with salt, pepper, and parsley. Add the fried tofu cubes back to the pan and toss to coat them in the sauce. Gently heat for a minute or two. Serve immediately over rice, pasta, or with toasted bread.
Tips:
-For a richer sauce, you can substitute heavy cream for some of the milk.
-Add other vegetables like peas or mushrooms to the sauce for extra flavor and texture.
-If you prefer a spicier dish, add a pinch of red pepper flakes to the sauce.
