Noodle Canteen Upper Hutt made me this vegan version of their Fried Kuai Teow off their Wok Tossed Noodles menu. It usually has meat and seafood but they were happy to swap that for tofu.

Mmmm delicious! Thick rice noodles with fried tofu, bean sprouts, onions, carrots, broccoli, mushrooms, and spring onions in a dark soy and chili sauce.

I was only going to eat half of it and save some for lunch the next day, but it was too good!

The verdict: My kids like the raspberry more, and my husband and I like the caramel more. They are both so good!

As a trial and we ask for feedback from vegan people these are $5 this weekend until stock runs out. We have only made a small amount test batch.
