⚜️ Through the IMCC Skills Academy for Hospitality & Culinary Arts, we promote classical culinary knowledge, professional technique, food safety, and consistent international standards.

⚠️ This collection presents fundamental stocks, fonds, fumets and classical culinary liquids used throughout professional cuisine.

♦️PROFESSIONAL TECHNICAL PRINCIPLES

🔹Cold Start
Begin appropriate stocks with cold water to support clean extraction.

🔹Controlled Simmering
Maintain a gentle simmer. Avoid vigorous boiling when clarity is required.

🔹Skimming
Remove impurities and excess fat throughout cooking.

🔹Proper Straining
Use a fine chinois or appropriate filtration method to achieve the desired clarity.

⚠️ No Unnecessary Salt
Foundational stocks are generally left unseasoned so they can be reduced or incorporated into finished preparations without excessive salinity.

🔹Rapid Cooling
Cool prepared stocks rapidly using an approved food-safety method.

🔹Correct Storage
Keep stocks covered, labeled, dated and stored under the applicable food-safety requirements.

⚠️ HACCP & FOOD SAFETY

🔹Professional stock production requires strict control of:

🔹Receiving • Cooking • Cooling • Storage • Cross-Contamination

🔹Cooling is particularly important. Large volumes of hot stock must be divided into suitable containers and cooled rapidly according to the establishment's validated HACCP procedure and applicable local regulations.
