Turnip Juice Diyarbakir style Recipe

Turnip Juice is a traditional non-alcoholic fermented beverage in Diyarbakir which is generally preferred with kebap. That's because it helps digestion. Preparing turnip juice is same as making pickles. The only difference is that the vegetables are eaten in pickles and juice is drank.

Ingredients:

1 large turnip
1 large beet
2 pounds carrots
2 lemons, juiced, or 1 1/2 teaspoons crystal citric acid
1/3 cup pickling salt
1/2 loaf Italian bread
5 cups purified water

Steps to Make It:

1 Wearing rubber gloves, peel the turnip and beet and slice them. Peel the carrots and divide them into fours.

2 Wrap the half a loaf of bread in the cheesecloth and tie off the end to make a "hobo sack." Put the sack inside the glass jar. Add the sliced vegetables and all the other ingredients except the salt.

3 In a separate container, mix the salt with about 3 cups of purified water to dissolve it, then pour it into the jar. Add more water if needed to fill the jar to the top with liquid, ensuring that all vegetables are completely covered in liquid. This is key to ensuring a safe environment for the vegetables to ferment. Close the lid tightly.

4 Set the jar aside in a cool place to ferment for 15 days. Don't attempt to open the jar before 15 days pass.

5 After 15 days, open the jar and remove the cheesecloth and bread. The bread has acted as the fermenting agent. Like all fermented items, particularly turnips, the aroma may be pungent. This is normal, and a sign of good fermentation. Once you chill it, your "şalgam" juice is ready to drink. You can serve the now pickled vegetables alongside to munch on.

Tigranakert-FarqinSilvan castle, Diyarbakir. (1910-11)

According to some researchers, BC. When it was established as the capital of the Armenian King Tigran II the Great Kingdom in 77, the city walls were built, then a major repair was made during the Byzantine period and took its final shape with some additions. While under the rule of Hamdanids and Marwanids, new bastions and walls were added to the castle, and the castle was made more fortified. The castle was built of limestone and consists of a square plan, inner castle, outer wall and a second wall surrounding the outer wall. The castle, which was built as two floors, is 600 meters from east to west, 500 meters from north to south, with a total length of 2200 meters. It has 50 bastions and nine gates. Four of the gates in the south, two in the north, two in the west and one in the east, the names known today are: Tavern Gate, Boshat Gate, Kulfa Gate, Asagi Mahalle (leather jer) Gate, Burcu Shah Gate and Diyarbakir Gate. It was built in a plan scheme close to a rectangle. There are various inscriptions belonging to Ayyubids, Artuqids and Mervanis on the bastions and gates of the castle.

Nur Tower
Diyarbakir Fortress

Nur Tower is situated to the east of Seven Brothers Tower, to the south of Diyarbakir Walls. It was commissioned in 1089 by the Seljuk ruler Melikşah. In terms of its Kufic inscriptions and the variety of animal figures, it is one of the city's most opulent towers. The sophistication evident in the reliefs of a long-horned goat and a running horse are especially impressive. Also the dove motifs next to the inscription and, directly below the doves, the relief of a short-haired woman sitting crossed legged in the n**e, holding her feet with her hands, is rarely seen in Islamic iconography which is also remarkable. It is interesting to note that it focuses on horses, rather than sphinxes, lions and bulls.

Goat Tower (Keçi Burçu)
Diyarbakir Fortress

The Goat tower is the oldest and largest of Diyarbakir's citadel towers on east of Mardin Gate. It is called the goat tower because only goats could manage to climb the cliff upon which it was built a 60-meter long tower projecting out from the southern section of the fortress for defensive purposes. The exact construction date is unclear. It was built on a site of an ancient temple devoted to sun worship and was later restored and added to the fortress by the Merwanid Dynasty in 1223. The interior of the tower there are arches supported by 11 columns, and contains a cistern and underground passageways and secret corridor to Tigris River that is blocked. This tower has the best panoramic view of the city, the Hevsel Gardens, the Tigris River Bridge and Valley. A section inside the tower was once used as a dungeon. The tower was restored in 2004 and is used today as an art gallery, concerts, reception etc.
