Veiled Rice (Duvaklı Rice) Diyarbakır Recipe
Ingredients:
2 cups of rice
3 cups of water
Liquid oil, butter and salt (I also added boiled chickpeas, not in the original recipe.)
Minced beef up to 300-400 grams
About 2-3 tablespoons of liquid oil.
1 head onion
a few sprigs of thinly ground parsley
1 handful of shells of almonds peeled
Salt, black pepper, new spring.
Preparation:
Wash the rice stored in hot salt water with plenty of water and filter the water.
Put about two tablespoons of butter in a rice cooker with some liquid oil and fry it well.
After that, add hot water, when you start boiling over a high heat, drain the water over the lowest heat and cook until it is smooth and cover it with a clean cloth and leave to boil.
Fry the minced meat in oil and when it turns color, add the onions, then the almonds and continue roasting.
When you drain the minced meat juice, add the last of the salt, spices and ground parsley and cover the bottom.
Serve the minced meat mixture first, then put the rice upside down. I used a tart mold, you can also use a flat pan.
