Safe Food Programme This is an official page for the Safe Food Programme "Centre for Safe Food".

We offer free training and awareness on Food Safety and Hygiene to Schools, Kitchen Staff, Children's Homes, Food Vendors and other related humanitarian work. Safe Food Programme is a food safety & hygiene community & a non-profit organisation, which offers free food safety training programs to small street food vendors, butchers, mama mboga, school cooks, children's homes and other related humanitarian work.

Personal Behaviour or habits.
A person's behaviour and personal habits can have a significant effect on the safety of the food or food products in food preparation or selling areas. Food handlers should be trained & always supervised to ensure certain behaviours or habits are not allowed or discouraged in food areas.

Staff dealing with food should promote a culture of personal professionalism in their workplaces.

Improper Activities: To prevent food or product contamination, staff working within a food area must refrain from the following habits.
• Smoking
• Spitting
• Chewing or eating in food areas
• Finger licking
• Biting nails
• Don't sit on the sink, working table or any other food working areas.
• Sneezing or coughing in the food areas
• Scratching yourself or poking your nose/ears with your finger inside the food areas.

If you have to do the above, do it, but away from the food-selling areas or processing. Once you've finished, wash your hands thoroughly with soap and enough water, before allowing yourself back to the good areas.

Food Safety and Hygiene in food areas should be mandatory for every businessman and woman to safeguard the citizens from food poisoning and other unhygienic-related diseases.

Foods Receiving & Sanitation Guidelines:
All food products which are coming in weather by a supplier or purchased by the hotel directly from the market. Should be checked thoroughly to make sure they meet quality standards stated in the operations purchase specification or recommended internationally food safety procedures.

1. Car/Vehicle; check the condition of the transport delivery vehicle. Look inside of the interior is it clean, is it an open-bed or an enclosed vehicle? Open-bed vehicle have high chances of product contamination.

2. Product Packaging; check the package sealing if damaged, compromised or opened don't receive it. Be strict and firm at the checking & receiving area.

3. Odours; check the unusual or foul odours in incoming products, if it's there don't accept it.
4. Frozen Products; check well & carefully on incoming Frozen products or snacks. Some might have stayed in the freezer long enough & appear Spoiled or damaged, because of power off & on.

Food storage
Food is supposed to be stored properly as soon as it's delivered by a supplier or you purchase it.

Below are some of the simple storage guidelines you can put into practice at your workplace.
1. Food should be stored properly as soon as possible after receiving it.
2. Keep stored foods covered to avoid odour absorption & objects or particles falling into them.

3. Place food on slotted shelves that are at least 2 inches away from the wall & inches off the floor.
4. Keep stored foods covered away from the wall & dripping pipes.

5. Don't use metal containers; they're hard to clean, sanitise and maintain.
6. Store staple foods such as flour, cornmeal and rice in rustproof and corrosion-resistant containers with tight-fitting lids.
7. Keep frozen foods in their original containers.
