At Abe Suisan, one fish immediately caught my eye—a real beauty. It’s called Tsumuburi. Despite its name, it isn’t actually a yellowtail (buri). I was told its flavor is closer to horse mackerel (aji). This is exactly why Tsukiji is so special—there’s always an incredible variety of fish to discover.

Obayashi Shoten’s famous Honkare Chiai-nuki (premium fermented, bloodline-free) shaved bonito flakes are available again.

According to the owner, her back pain worsened in early July. Fine-tuning the shaving blade puts a great deal of strain on her back, and she made a firm decision: “If I can’t adjust the blade to the standard I’m satisfied with, I won’t sell it.”

When I stopped by the shop this morning, she smiled and said, “I think I can start selling it again today.”

This is what makes Tsukiji special. There is no compromise when it comes to quality.

A visitor from the US, his name is Tennessee, stopped by our information center with a keen interest in Japanese fermented foods. We introduced them to Yoshiokaya Sohonten, a long-established pickle shop specializing in one of Japan’s proudest fermented foods—tsukemono.
He eagerly asked questions about salt content, how fermentation progresses, and how to tell when pickles are at their best. Afterward, he continued exploring the market and shopping, enjoying the authentic Tsukiji experience. It was a rewarding day, and we were delighted to share the richness of Japanese food culture with an international visitor.
