The Mighty Millet: Scientists Investigate Its Minerals Availability to Fight Deficiency
Scientists feel that millets have the potential to tackle malnutrition due to its mineral richness. However, millets also have high dietary fibre content that reduces bioavailability of minerals. Primary dietary fibre in millets is arabinoxylan, with presence of xylose and arabinose in it. This binds both calcium and potassium but zinc binding was poor. Bioavailability of calcium would depend on gut microbes breaking down dietary fibre. The property of binding calcium by dietary fibre could be explored in developing high calcium biofortified millet varieties.

Sugar Reduction: Ingredients And Strategies for Sweet Success
Health professionals, regulators and consumers have been demanding sugar reduction in many of their food products. This has been a global phenomenon including India. It is easier to say than to do it as there are several constraints in sugar reduction. Firstly, sugar does not just provide sweet taste, it also provides texture, bulk and preservative effect. Even in beverages, it provides body and other properties that are difficult to emulate with substitutes. Many sweeteners have been used to replace sugar and there are some shortcomings like difficulty in matching exact taste profile of sugar, stability, some of them with safety issues, and some having side effects. So there are some technical aspects that need to be considered before sugar reduction. There are also some new sweeteners with better properties that also could be considered along with the cost issues. Many new formulations with other ingredients may also affect functional and sensory properties of reduced-sugar food products. Thus, many challenges exist in developing reduced sugar products that are not see by advocates of sugar reduction. The most important point that needs to be remembered is that while sugar reduction in diet is beneficial but the overall health benefits depend not just on total diet but also physical activity and many other factors.
