RAJSTHANI KADHI PAKODA IN VILLAGE STYLE

Rajasthani Kadhi Pakoda is a popular dish in Rajasthan and is loved by people all over the country. Here is a recipe to make it in a village-style:

INGREDIENTS :

FOR KADHI :

1. 1 cup Besan (gram flour)

2. 2 cups Curd

3. 4 cups Water

4. 1 tsp Turmeric Powder

5. 1 tsp Red Chilli Powder

6. 1 tsp Coriander Powder

7. 1 tsp Cumin Powder

8. Salt to taste

FOR PAKODAS :

- 1 cup Besan (gram flour)

- 2 medium-sized Onions, finely chopped

- 1 Green Chilli, finely chopped

- 1/2 tsp Red Chilli Powder

- 1/2 tsp Turmeric Powder

- Salt to taste

- Oil for frying

FOR TEMPERING :

* 2 tbsp Ghee

* 1 tsp Cumin Seeds

* 1 tsp Mustard Seeds

* 2-3 Cloves of Garlic, finely chopped

* 1-2 Dry Red Chillies

* A pinch of Asafoetida (Hing)

* Curry Leaves

INSTRUCTIONS :

1. To make Kadhi, take a large mixing bowl and add besan, curd, water, turmeric powder, red chilli powder, coriander powder, cumin powder, and salt. Whisk everything together to form a smooth mixture.

2. Heat a pan on medium flame and pour the Kadhi mixture into it.

3. Keep stirring continuously to avoid lumps.

4. Cook for 10-15 minutes or until the Kadhi thickens. Turn off the flame and keep it aside.

5. For Pakodas, take a mixing bowl and add besan, chopped onions, green chilli, red chilli powder, turmeric powder, and salt. Mix everything well.

6. Add water little by little to form a thick batter. Heat oil in a kadhai or deep-frying pan.

7. Once the oil is hot, drop spoonfuls of the batter into the oil and fry until golden brown.

8. Remove the Pakodas from the oil and keep them on a tissue paper to absorb excess oil.

9. To make tempering, heat ghee in a pan and add cumin seeds, mustard seeds, chopped garlic, dry red chillies, a pinch of asafoetida, and curry leaves. Fry for a few seconds until the spices release their aroma.

10. Add the tempering to the Kadhi and mix well.

11. Add the Pakodas to the Kadhi and mix gently.

12. Garnish with fresh coriander leaves and serve hot with rice or chapatis.
