SMOKE SIGNALS FROM THE NORTHEAST —
From the kitchens of Manipur, Chef Pradip Abung brings forward a soulful interpretation of indigenous coastal flavours with his Roasted Stuffed Mussels.
Blanched mussels are finely chopped and sautéed with spring onion, garlic, seasoned mashed potatoes, and regional spices before being carefully stuffed back into their shells and fire roasted — creating a dish that balances comfort, smoke, texture, and heritage in every bite.
Rooted in the culinary traditions of Northeast India, this creation reflects the beauty of transforming humble local ingredients into contemporary plated artistry.
