This week, we hosted a fantastic Japanese Nikka Whisky Portfolio Tasting and Masterclass with Raphael Cristini, Nikka’s European Brand Ambassador, at our new venue, The Mansion House Bar, as well as online via Zoom.

We wrapped up our year with a fantastic celebration at the The Granville Hotel, Waterford

With our biggest membership to date, the event sold out completely — and we even had to extend our ticket allocation to accommodate everyone who wanted to join us. What an incredible way to finish 2025!

A massive congratulations to all our new Waterford Whiskey Society Vikings — 21 members received the honour this year!
And a heartfelt welcome to all members who joined us throughout 2025.

The food was excellent, the company outstanding, and the whiskey lineup truly special. We explored unique drams from several countries and finished the evening in style with our award-winning 23-year-old Hinch Single Malt, beautifully finished in a Pedro Ximénez cask from Ximénez-Spinola Bodega.

Huge thanks to the amazing Granville Hotel team for their top-class service, and hats off to our members for your continues support over the years.

Here’s to another great year ahead — we look forward to seeing you all in 2026!

We are truly humbled and would like to congratulate all our members on this amazing achievement. Your passion, support, and dedication are what make us such a great community and society.

Dear Members,

We are delighted to announce that pre-orders will open today at 18:00 on our website for our exclusive 23-Year-Old Hinch Single Malt Whiskey, finished in our PX cask from Ximénez-Spinola Bodega.

This exceptional whiskey was initially matured for 22 years in two bourbon casks before being refilled into our society’s single PX sherry cask, which we brought from Jerez after bottling our own sherry with Ximénez-Spinola last year. The whiskey then rested in our cask for almost seven months, developing beautiful layers of rich Pedro Ximénez sherry character.

The result is a well-balanced single malt that retains the elegant bourbon influence while gaining fruity depth and subtle sweetness from the PX sherry finish. This 23-year-old triple-distilled whiskey, bottled at cask strength (54.8% ABV), is available exclusively to the Waterford Whiskey Society.

On Tuesday, The Cove Bar was packed as we welcomed Copeland Distillery to our society for the very first time. Members were treated to seven unique samples, including the unreleased 25.3 Single Malt.

A big thank you to Gareth and Michael for making the journey from Northern Ireland and delivering such an excellent experience. Their stories, passion, and whiskeys left a lasting impression, with plenty of positive feedback from our members about the exciting things happening at Copeland.

We’re grateful to everyone who joined us, both in person and on Zoom, for another memorable evening of great whiskey and good company.
