For our final session of the Autumn Series, join us live on Tuesday, 13th October at 8 PM with first-generation Galway poultry farmer Brian Dilleen.Brian purchased an 11-hectare farm and transformed it into Mad Yolk Farm—a vibrant, regenerative, and community-rooted farming hub.

He manages 2,000 free-range hens rotated regularly through pasture using mobile hen houses, and has expanded to include a market garden, a sauna, a community space and a farm shop.Want to learn how he brings the consumer directly to the farm for food and lifestyle experiences? Burren Winterage School & Farm Visit - part of Burrenbeo Trust Winterage Weekend 🌿

Join us in the Burren for a fascinating day exploring transhumance, farming traditions and the management of high-nature-value grasslands in Ireland and Croatia.

The day will bring together farmers, conservation practitioners and researchers to share knowledge and experience — followed by a visit to a Burren farm and a guided walk across the iconic Burren landscape.

On her 100-acre farm, certified organic since 1998, Margaret brings new life to the land through organic beef production, glamping, biodiversity conservation, and farm-based experiences. She uses rotational grazing to ensure consistent pasture for her pedigree herd of cows.
