The Lineup
Zuidam Korenwijn 1yr (Dutch Genever)
Not Irish—but a fascinating start. A distillery Liam has long wanted to spotlight, this malt-rich genever adds a left-of-field twist to open the evening.
Redbreast 12yr (Edward Dillon & Co.)
A mid-90s/early 00s bottling that sets the tone for the next dram—classic sherried pot still with nostalgic depth.
Redbreast 15yr (LMDW 2005)
A legendary La Maison du Whisky release. Complex, elegant, and widely regarded as one of the finest Redbreasts ever bottled.
Tyrconnell 10yr Madeira Cask
A cask finish Liam remembers fondly. We’re aiming for the old label version—if not, the modern iteration will step in.
Connemara Turf Mór Cask Strength
A peat lover’s dream. This bold, smoky Cooley expression continues the story with raw, earthy power.
Teeling 11yr “The Gathering”
A curveball to close: distilled at Bushmills, not Cooley, and featuring 21-year-old crystal malt. Bottled for Cork/Dublin export around 2013—this one surprises even seasoned Teeling fans.
