busy morning at the community garden before our mousakka workshop.

We harvested a bunch of lemongrass that we grew from seed in early spring.
we were impressed by the stem length. A big batch of lemongrass was woven into wands & stored in the freezer so that we can enjoy over the winter for tea infusions, curries & other yummy dishes

🌿 Exciting News from Knocknaheeny Hollyhill Community Garden! 🌿
👉🏼We are absolutely delighted to announce two major sustainability milestones at the Knocknaheeny Hollyhill Community Garden and NICHE Health Project Cork!
♻️We are constantly striving to make our garden greener, reduce our carbon footprint, and create a healthier, more sustainable environment for our whole community.
♻️ Introducing Our New Ridan Food Waste Composter!
😁We are thrilled to unveil our brand-new Ridan Food Waste Composter!
This eco-friendly, continuous-flow composting system will allow us to convert food waste and organic materials into rich, nutrient-dense compost right here on-site.
🤗How It Helps Us: It processes all types of food waste completely off-grid without requiring electricity.
♻️Environmental Impact: By recycling our food scraps locally, we divert organic waste from landfills, cut down on greenhouse gas emissions, and reduce local carbon output.
🪏Soil & Crops: The resulting compost feeds our vegetable patches, herbs, and fruits naturally, closing the loop from plot to plate!
☀️ Solar Power This Month!
To further lower our carbon footprint, we also see the benefits of Solar Panels installed this month!
🪫Clean Energy: Tapping into renewable solar energy power will fuel our indoor community hub facilities sustainably.
💑Community Model: Showing how local health initiatives and community spaces can actively lead the way in climate action and renewable energy.
💚 Healthy Community, Healthy Planet
At NICHE Health Project Cork, we believe that personal health and environmental health go hand-in-hand. By combining sustainable gardening, local food production, solar energy, and zero-waste composting, we are cultivating a greener future together!
📍 Visit Us: Drop by the garden to see the Ridan composter in action and learn more about our upcoming green initiatives!

🌱 Community, Flavor, & Fresh Harvests at NICHE! 🍐✨
👉🏼We had a fantastic morning at the NICHE Community Garden during our 11 AM–1 PM cooking workshop! 🧑‍🍳🌿
☺️Together, we turned fresh garden-grown lemongrass and ginger into an aromatic homemade syrup, then soaked our organic pears to bake a delicious, warm pear crumble. On the savory side, we cooked up crisp homemade onion bhajjis paired with Spanish cubed potatoes and a signature special sauce.
🙏🏼A massive thank you to all our wonderful participants for bringing great energy and sharing new recipes with us! 🥧There’s nothing quite like gathering to share and enjoy a healthy, delicious community lunch. 🍲💚
🙋🏼‍♀️Stay tuned for our upcoming workshops, we can't wait to cook with you again! 👇
