EPISODE 58 THE PROTAGONISTS : PIO BOFFA
Pio Boffa, owner of the historic Pio Cesare winery in Alba, died suddenly, at the age of 66, on April 17, 2021, struck down by Covid. With him goes a piece of Italian wine history, a standard bearer of Barolo in the world, but it is also a loss for national enology. His was a life half spent on an airplane, always on the move to promote his Barolo, but with it the Langhe, Piedmont. He gladly mentioned the "globetrotter" vocation of his family and the passport n.55 of the Kingdom of Italy obtained by his grandfather.
Charismatic figure, with an unmistakable rough and powerful voice, he sometimes seemed like a seasoned actor, always "on stage", he would have said that he had acquired a taste for the English language with a strong American accent, perhaps because the USA were the stronghold of his success and he went there continuously, even for just one night. With energy and an always ready joke, he knew how to effectively explain the origins of Barolo, the tradition of the blend, of equal dignity with respect to the exaltation of the crus. Note his battle for classic Barolo not to be called "base" or "regular". He was one of those Piedmontese who loved to act, not boast, forced to the "show" but basically shy: for this reason sometimes his intuitions did not get the prominence they deserved.

EPISODE 57: TYPICAL DISHES - PANNA COTTA
Panna Cotta is an Italian dessert invented around 1800-1900, whose origins are unclear: in fact, it is said to have been created at the beginning of the 1900s in the Piedmontese Langhe by a LADY OF HUNGARIAN ORIGINS, but there is written evidence of mid-nineteenth century coming directly from Giacomo Leopardi, who described the ingredients to his father during his stay in Bologna.
This type of dessert resembles a pudding, but unlike the latter, it is prepared without eggs and with only 3 basic ingredients: cream, sugar and edible gelatin. If you like, you can then add aromas that make it more interesting, and of course also fruit and non-fruit sauces, to sprinkle over the dessert once it's finished. The sauces for panna cotta are of infinite variety, and are divided between fruit-based ones, generally called coulis, and flavored ones, for example caramel or chocolate

The Nascetta vine is a native of the Alba area, grown in the Langhe, in the hills between Barolo and Novello. Rovasenda mentions it in his "Saggio di un'ampelografia universal" of 1877 and describes it as "a very delicate grape and an exquisite wine". Over time, however, this vine variety has faded into the background and today, unfortunately, the Nascetta is grown exclusively in the municipality of Novello and moreover in a very limited way. Nascetta, Anascetta or Nas-cëtta are the names that have been used over the centuries to indicate this vine, which miraculously survived extinction. Only recently have some winemakers become interested in Nascetta again. In 2002, the Nascetta became part of the Langhe DOC and in 2010 the Langhe "Nas-cëtta" typology of the Municipality of Novello DOC was recognized. The calcareous-clayey marls of the Langhe give Nascetta wines structure, acidity, complexity and minerality. The Nascetta wine has a bright and brilliant straw yellow color. The nose is dominated by hints of white flowers and citrus and fruity aromas. On the palate it is a wine with a good structure and remarkable freshness, enveloping, savory, with a slightly bitter finish.

The Gaja winery began producing wine in Barbaresco, in the Langhe, since 1859. The philosophy of bottling only the best vintages by selling the others in bulk, together with the idea of ​​the family name being the protagonist on the bottles, was Giovanni Gaja, while the chromatic representation of the labels was chosen by his son Angelo. Gaja has built around itself the image of a strong and indispensable brand, symbol of a wine that knows how to tell the poetry of its territory in the glass. This winery in the Piedmontese Langhe is recognized throughout the world for the legendary Barbaresco, in fact Angelo Gaja is nicknamed in France "The King of Barbaresco". The Gaja winery was the first to use barriques, the first to adopt caps over six centimeters long, the first to lengthen the necks of the bottles. The first in many techniques and, due to the quality levels achieved, also in the ratings. Today Gaja is a real legend in the international wine scene; the 1985 Barbaresco was considered by Wine Spectator "the finest wine ever made in Italy" and in 1997 received the distinguished Service Award. Decanter elected Angelo Gaja "man of the year" in 1998 and in 2011 Wine Spectator dedicated a cover to him. A success made of personality and soul, not only for the excellent grapes and the meticulous operations carried out in the vineyard, but also in the ability to coordinate tradition with the innovation of the times.
