識揀海鮮. Choose Right Today 「識揀海鮮」 為香港人提供環保海鮮選擇指引,解構其重要性及哪裡可享用到這些產品。

香港人口雖少,但對海鮮的需求卻非常驚人,據統計,香港每人每年平均吃掉70公斤的海鮮,是全球平均的四倍。昔日的漁港,現在幾乎無海鮮可捕,由於香港海域的漁獲日漸稀少,香港海鮮需依賴入口,令香港成為全球第十大魚類及其他海鮮的入口地區。而全球亦面對過度捕撈的危機,海洋只剩一成未被完全開發。

「識揀海鮮」希望大家認識及選擇食用環保海鮮 ╴即以盡量不會對海洋環境帶來傷害的方式捕捉或養殖的海鮮,以及目標品種未受過度捕撈所威脅的海鮮。這些海鮮來自受到良好監管的漁業及養殖場,因此我們的海洋生態可保持健康、蓬勃發展,我們的下一代才不至於無海鮮可吃。

Hong Kong is the 10th largest importer of seafood. Having fished out our own waters in Hong Kong, we now depend on imports for 90%

of our seafood needs. In fact, overfishing is a global issue, as of now, only 10% of the world's oceans is underfished. What are our prospects for fish at all? Sustainable seafood is seafood that has been captured or farmed in a way that minimizes harm to the marine environment and where the population of the target species is not being overfished. It comes from well-managed fisheries or farms so that our oceans remain healthy. Fish and shellfish populations will then thrive and be available for our future generations.

Be an ocean-friendly seafood lover 🍽️🐟💙

Hong Kong, Macau, and Singapore are cities of seafood lovers. Taking Hong Kong as an example, on average, every Hongkonger consumes 66.5 kg of seafood per year – three times the global average😳

In support of World Oceans Day 🌊, restaurants from leading hotels and a meal plan service in Hong Kong, Macau, and Singapore get a sustainable makeover in June by offering specially curated sustainable seafood dishes or menus, revealing that delicious dining can be responsible.💙

Unsustainable commercial fishing is one of the greatest challenges to the oceans. Over 30 percent of global fisheries are overfished. As diners, we have the power to influence positive changes through making ocean-friendly choices, such as choosing certified sustainable seafood or seafood recommended by seafood guides.

💙🐟🍽️環保海鮮節即將開始~
在六月一連四星期的環保海鮮節匯聚香港、澳門及新加坡三地,超過 45 間來自各大酒店的餐廳及訂餐服務,推出精心設計的可持續海鮮菜式。所有參與餐廳和可持續海鮮菜式已經放咗上活動網站啦!https://sustainableseafoodfestival.com/

當中不少菜式在單點菜單及套餐餐單全日供應,邀請大家將可持續飲食方式融入日常生活中,在享用海鮮的同時,也能愛護海洋🌊。例如:

香港置地文華東方酒店的 Amber 將推出以 MEL 認證生蠔 🦪搭配墨西哥小番茄、青蘋果、墨西哥辣椒與泰國羅勒的創意菜式。香港尖沙咀凱悅酒店 Hugo’s 餐廳 將推出「可持續海鮮塔」,包括 MSC 認證阿拉斯加雪蟹腳 🦀及 MSC 認證野生波士頓龍蝦 🦞。 The Hari Hong Kong 酒店的 Lucciola 餐廳及酒吧 將於單點菜單中提供焗烤 MSC 認證小龍蝦,搭配阿瑪菲檸檬與 Nocellara 特級初榨橄欖油。

澳門永利皇宮的紅 8 粥麵 將於全日供應單點 菜單中推出三道中國特色佳餚,包括:魚香加拿大帶子(MSC 認證)及西蘭花炒鳳尾蝦 (ASC 認證)🦐。

新加坡濱海灣金沙酒店的 RISE 推出包含八道菜式的 「RISE 可持續餐單」,當中有 BAP 認證果亞魚咖哩鱸魚🐟,配以風味椰香奶油醬及羅望子。

💙🐟🍽️Sustainable SEAFood Festival starts tomorrow!
This unique four-week event in June will feature over 45 restaurants from top hotels and a meal delivery service in Hong Kong, Macau, and Singapore. Explore all participating restaurants and special dishes at the event website! https://sustainableseafoodfestival.com/

Each restaurant will serve specially curated sustainable seafood dishes available in their à la carte and regular set menus, inviting diners to choose sustainable options in their daily life and revealing that delicious dining can be responsible.🌊

In Hong Kong, Amber, The Landmark Mandarin Oriental, Hong Kong will serve Oyster (MEL Certified) 🦪 paired with Tomatillo, Granny Smith Apple, Jalapeño and Thai Basil as part of the full Amber experience menu. Hugo’s at Hyatt Regency Hong Kong, Tsim Sha Tsui, will serve the Sustainable Seafood Tower that includes Alaskan snow crab leg (MSC certified) 🦀and wild-caught Boston lobsters (MSC certified) 🦞. Lucciola Restaurant & Bar, The Hari Hong Kong, will have Baked MSC certified Scampi with Amalfi Lemon and Nocellara Extra Virgin Olive Oil available on the à la carte menu.

In Macau, Red 8, Wynn Palace, will serve a series of three special Chinese dishes on the à la carte menu, including Tossed Canadian scallop (MSC certified) with cashew nut and dried chili in spicy sauce, and Wok-fried prawn (ASC certified) 🦐 with broccoli, ginger and pepper.

RISE Restaurant, Marina Bay Sands, Singapore will serve an eight-course RISE Sustainable Menu, which includes Goan Fish Curry Seabass (BAP certified) 🐟 with creamy coconut sauce and tamarind.

邊一種對蝦環境影響比較細?養殖可能會好啲,不過養蝦業需要開墾潮間帶做蝦塘,對全球近四成紅樹林損失有一定關連。其次,養殖方法、飼料、魚苗來源等等都有機會影響環境和野外群種,所以要慎選!

Tips for Healthy, ocean-friendly meal🌟 ._ showcased how to make one quickly using shrimps 🦐 and shared with us a recipe😋 The shrimp is available at online shop .hk 🛒

Which type of shrimp is more environmentally friendly? Probably the farmed shrimp, but not completely… About 40% lost of mangrove habitat is associated with the development of shrimp farm. Different aspects including the farming method, feed and seed may have a negative impact on the environment and wild populations.

As a significant international trade hub, Hong Kong can play a leading role in driving sustainable consumption of seafood regionally and globally.

💙The Ocean’s Love Language💙
We are deeply connected to the ocean. Not only does it moderate the climate🌀, but it also provides us with an abundance of resources and food🐟🦐, and supports our livelihood and even economy. How do we give back? Choosing sustainable seafood is one of the ocean’s love languages💙, as are beach cleanups and waste recycling.

In support of World Oceans Day, over 40 restaurants from Hong Kong, Macau and Singapore are serving specially curated sustainable seafood dishes 🍽️ 🦞 from 1st to 16th June to invite all of us to collectively protect the precious marine resources and ecosystems🐠🪸. See details via link in bio.

Sustainable seafood refers to aquatic products that have been farmed or caught🎣 in a way that minimizes impact on the environment and marine life, through traceable sourcing and responsible management, to preserve the abundance of seafood for us and future generations.

【 活動回顧 📸 】
謝謝大家參與「當魚拓藝術遇上環保海鮮 」工作坊!當日講者分享過度捕撈及環保海鮮等議題 🐟🦐,為了下一代可以享用豐富海洋資源,漁業及個人飲食習慣都需要改變。

經過魚拓藝術家的講解及教導,大家採用環保海鮮製作了精美魚拓作品 🧑‍🎨。不少參加者想知更多關於如何在日常生活中找到環保海鮮。有見及此,我們準備了多個指南,幫助大家在街市、餐廳及網店採購環保海鮮💡Link in Bio ~
