Southam Baking Circle

Southam Baking Circle Amateur baking group of all ages where bakers get together to share tips, skills, try out something new and have an evening of fun and laughter!

We are an amateur Baking Circle based at Southam Congregational Church, however we are a non-Church affiliated group (we just rent their room). We welcome anyone of any age or baking capability! We have a meeting every second Thursday of the Month and at our meetings our members get together to share tips, skills, try out something new and have an evening of fun and laughter!

Fajita seasoning
Ingredients
Original recipe (1X) yields 4 servings
• 1 tablespoon cornstarch
• 2 teaspoons chili powder
• 1 teaspoon salt
• 1 teaspoon ground paprika
• 1 teaspoon white sugar
• ½ teaspoon onion powder
• ½ teaspoon garlic powder
• ½ teaspoon ground cumin
• ¼ teaspoon cayenne pepper

Method
Combine all ingredients.
When cooking fajita filling fry meat/veg/whatever you are having until cooked. Mix seasoning with 100ml water and add to pan and cook down for 10 mins.

Flour Tortillas

Makes 8 large or 12 medium

Ingredients
400g self raising flour
½ tsp salt
200ml warm water
3 tbsp extra virgin olive oil

Method
Combine flour & salt in a large bowl. In a measuring jug mix the luke warm water & oil together and add to the flour.

Stir together until all ingredients are well combined and form a dough.

On a floured surface, knead dough for 2-3 minutes until smooth. Divide the dough into 12 balls and roll out individually until very thin and approximately 20cm across. The dough will shrink back a bit when it’s resting.

In a large frying pan warm a teaspoon of oil and cook each tortilla for about 1 minute each side on a medium heat. Each side should start to brown on any raised areas.

Cover with a tea towel which we cook the fajita filling.

Tomato salsa

Ingredients
• 4-6 medium tomatoes
peeled and finely chopped
• ½ red onion
very finely chopped
• 1 small garlic clove
chopped
• small splash of white wine vinegar
• ½ lime
juiced
• ½ bunch of coriander
roughly chopped

Method
Combine all ingredients in a bowl.
