Sake & Sashimi Soirée with Oeno Maris – 9 July 🍶🐟

Join us for a special evening with our friends at artisan fishmonger & wine bar Oeno Maris, on Thursday, 9 July. 👏🏻👏🏻

Likely our last event as we head into the summer holidays, this will be a wonderful chance to get together with fellow BSA Members and sake-lovers alike — all while savouring the perfect marriage that is sake and sashimi. 🍣🥢

Special Study Group & Social - 29th June - Shochu & Spirits Distillation 🍠🌾

The BSA Committee is excited to announce a special study group focusing on shochu and spirits distillation! 👏🏻👏🏻

✔️ We are excited to invite David T. Smith , an International Wine & Spirits Competition (IWSC) judge, independent spirits writer, historian, and consultant, to explore the science of distillation together.

🧐 What makes shochu unique? How is shochu distillation different from other spirits’ distillation? How are the cuts made for the heads and tails of a shochu distillate?

🥃 We will be sampling different distillates from sake-based shochu – heads, hearts, tails, and the blended finished product – as well as different types of shochu from Japan as a comparison. , the President of BSA, will kindly be bringing the rare & premium ‘3M’ shochu – Maou, Murao, and Moriizo (魔王、村尾、森伊蔵) – to the study group!

📚 No prior knowledge of shochu and spirits distillation is needed! Just a curious heart to learn more about Japanese spirits!

🍣 Join us at UKIYO Handroll Bar (so not our usual meeting spot at Vagabond Monument!!) – where we will indulge ourselves with amazing handrolls prepared by the UKIYO team.

Bodaimoto Study Group 🍶⏳

Thank you to everyone who attended the Bodaimoto Study Group on Monday!

This study group is likely to be the first of its kind in the UK to taste and directly compare Bodaimoto sake from different sake producers. We went deep into the history and significance of Bodaimoto, and how this technological breakthrough in the past has shaped how sake is made today.

We first explored the differences between Nara and Okayama-style Bodaimoto, featuring Gozenshu’s sake and valuable insights from . newest Bodaimoto series also follows the Okayama-style recipe. brought not only MIRU but also KIKU, a Bodaimoto sparkling sake that has not yet been released (just released today!), and the study group was the first group to try it!

We then tasted the Nara-style Bodaimoto from each brewery in Bodai-ken (except Mimurosugi, which was sold out in Japan!). From the super dry-styled Kikutsukasa to dessert sake-like Takacho, each Bodaimoto sake had a strong personality. What was common among the different Bodaimoto sake was a lactic creaminess and tangy sensation. A show of hands in the room and the two favourite Bodaimoto sakes on the day were Yatagarasu and Takacho.

The study group ended with a climax, tasting Bodaisen, a zero-step fermented sake brewed in an earthenware pot on the grounds of Shoryaku-ji. Bodaisen is said to be the ‘OG’ Bodaimoto sake, and only 200 bottles were produced per vintage!

Sake Study Group & Social – 1 June — Bodaimoto🍶🌾

The BSA Committee is excited to once again invite Members to our ever-popular Study Group. Our theme for this meeting will be bodaimoto! 👏🏻👏🏻

☸️ Bodaimoto, directly translated as “Enlightened Starter”, was a fermentation starter (shubo) preparation method that dates back to the Muromachi Period (1336-1573). Buddhist temples, most notably Shoryaku Temple in Nara Prefecture, were the centres of sake production.

📖 Once extinct, sake breweries in Nara and Okayama have now revived bodaimoto by studying ancient sake recipes.

🦌 Every year, Bodai-ken (Nara Sake Research Group for Producing Sake using Bodaimoto) holds the Bodaimoto festival at Shoryaku Temple. Brewers prepare the fermentation starter from scratch and once it’s complete, the brewers will take a portion back to their brewery and produce a bodaimoto sake with their own take.

🗾 Currently, there are only seven breweries remaining in Bodai-ken, and we will be tasting six of the seven bodaimoto sakes from those breweries!

*As the BSA will be providing the bottles, don’t worry about finding a bottle for the study group!

📚 No prior knowledge on bodaimoto is needed! Just be prepared to be enlightened like the monks in medieval Japan!
