Medlar! You can make jelly but you need to belt them first!

To blet medlars, you should pick them in late autumn, preferably after a frost. Then, spread them out in a single layer on trays and place them in a cool, dark, and well-ventilated area for about two to three weeks. This waiting period allows them to soften, develop a lovely fragrance, and turn a rich dark brown. This process, known as bletting, transforms the medlar’s starches into sugars while reducing acids and tannins, making them sweet and delicious rather than spoiled.
