NOW HIRING!

The Cheese Bar are looking for a Kitchen Supervisor to take centre stage at their one-of-a-kind cheese conveyor belt in Camden, Pick & Cheese. This is no ordinary kitchen role - the successful candidate will be a true cheese enthusiast, passionate about British and Irish cheese and excited to share that passion with guests.

The Kitchen Supervisor will be responsible for looking after Pick & Cheese's most valuable asset: the cheese itself. From ensuring every plate is beautifully prepared and perfectly paired, to chatting with guests about the incredible producers behind each cheese, you’ll help bring the conveyor belt experience to life.

At The Cheese Bar, the team is proud to champion British cheese and the amazing people who make it. They seek someone who shares that pride, thrives in a lively and energetic environment, and loves creating memorable experiences that dazzle diners at every single service.

Please join us in congratulating our newest 🎓Fellow of the Academy of Cheese, Jonny Tyson🏅.

Jonny is a wine and beer educator with over 20 years’ experience in drinks and hospitality. He has taught Academy of Cheese Level 1 at South and West London Wine Schools and is now Training & Education Manager at Ellis Wines. His passion for cheese developed through hosting cheese, wine and beer pairing sessions, which inspired him to begin his Academy of Cheese journey.

Alongside his work as a restaurant sommelier, Jonny also sits on the advisory board for the Guild of Beer Sommeliers, and plans to teach more cheese courses while exploring outstanding cheese, wine and beer combinations.

Reflecting on Level 3, Jonny highlighted "Cheesemaking (recipes and techniques)" as a standout module, particularly valuable for learners without a cheesemaking background. He also especially enjoyed the "Cheese Industry Knowledge" module, and its focus on history. A keen history enthusiast, Jonny has previously led tastings on the history of beer and wine.

Please join us in celebrating Jonny’s achievement and his continuing contribution to cheese education and drinks pairing. 👏

🧀 Huge congratulations to our newest Fellow of the Academy of Cheese, Andrea Roetti! 🧀🎉

Originally from Turin in Piedmont, Italy - a region where cheese is truly an institution - Andrea grew up enjoying “toma”, the local word for hard cheese, similar to the French “tomme”. His love of alpine-style cheeses, especially Fontina from the nearby Aosta Valley, inspired a lifelong passion that has now led him to become a Fellow of the Academy of Cheese.

Andrea’s Academy of Cheese journey began in London, where he completed his Level One certification in person at the iconic Paxton & Whitfield, before continuing his studies online with Charlie T Big Cheese. He then progressed to the deep technical knowledge explored at Level Three.

What makes Andrea’s story even more special is that cheese began as a passion project alongside his career in insurance. Since starting his Academy of Cheese studies, he has become known among friends and colleagues for organising unforgettable cheese and wine tastings at dinner parties and gatherings.

Now living in Luxembourg, Andrea particularly loved the “Tasting” module during Level Three, fascinated by the science behind flavour development and the challenge of translating aromas and sensations into words. He also found a deep appreciation for the world of affinage and the role of the affineur - “the most fascinating figure in the cheese industry”.

Congratulations again, Andrea - we are delighted to welcome you as a Fellow of the Academy of Cheese! 👏🧀

Good news for anyone deep in wedding planning mode. 🧀👰

Yes, most cheesemongers recommend booking a tasting 6–8 weeks before your big day - so you can sample, refine, and land on the perfect combination of cheeses. But the actual order? That doesn't need to be placed until 10–14 days before the event.
Which means there is plenty of room for a change of heart. 💅

Swapped your colour scheme? Reconsidered the whole vibe? Had a very strong opinion at 11pm on a Tuesday? No problem. Your cheese tower can flex with you - right up until the final stretch (this is where your cheesemonger is your best friend). And if you've just realised you completely forgot to order a traditional wedding cake? It is absolutely not too late to switch to a cheese tower. In fact, some would say it's a sign. 🧀✨

Book the tasting early. Place the order when you're ready. Arrive at your wedding knowing the cheese is sorted.
