Designed for business owners and senior professionals, it supports:

A snapshot of an industry that has been moving cheese, in one form or another, for centuries.

The business of buying and distributing cheese has always demanded expertise - knowing your producers, understanding your markets, getting the product to the right place in the right condition. That hasn't changed. The complexity has only grown.

For those working in cheese buying, logistics, and distribution today: this online, self-study module can be taken as a standalone professional certification. No prior Academy study required. It covers the full commercial and logistical lifecycle of cheese - from sourcing and supplier relationships, through to supply chain management and international trade.

This course is a supplementary module and can be studied alone or as part of the Level Three Fellow or Master of Cheese Certification.

Five years ago, Jessica Summer had never cut a piece of cheese in her life. 🧀

Then came a Christmas hamper order that changed everything: 40 orders, 4 cheeses each — and the realisation she didn't actually know what she was doing.
"I hadn't cut cheese or wrapped cheese until I was packing those hampers. That was a quick lesson in: you need more experience."

The next day, she signed up for Academy of Cheese Level 1. Two years later, she was Cheesemonger of the Year.

Jessica's advice to anyone on the fence? "Level 1 is the perfect foundation course. It should be a non-negotiable for anyone in the cheese business — factored in like your food safety certificate."

Back in June, we had Will Studd dialling in from Australia, Andy Hatch joining from his farm in Wisconsin and Graham Kirkham joining us straight from the tractor in Lancashire!

What a lovely event it was; our community tuned in from Paris, Malta, Mexico, Canada, Sweden, Ireland, Hudson Valley, Ohio, Somerset, and everywhere in between. And the chat was flying.

That's the Academy of Cheese community. Curious, passionate, and always finding the connections. The full recording is on Cheese TV now —

And don't forget Will's documentary, Cheese: Searching for a Taste of Place, is streaming on Amazon Prime now. 🎬🧀

From estate agent to Cheesemonger of the Year: Jessica Summer's story is a masterclass in what a proper career path in cheese can look like.

Five years ago, Jessica had never cut a piece of cheese. A chaotic first Christmas hamper order — 40 orders, 4 cheeses each, and zero prior counter experience — was the wake-up call. The next day, she signed up for Academy of Cheese Level 1 Certification.

That decision set off a chain reaction:
🎓 Study — Level 1, then Level 2, gave Jessica the foundation to move beyond product knowledge into storytelling: cheesemakers, provenance, the details that turn a sale into a conversation. She now has team members working through their own certifications at Mouse & Grape.
🏆 Young Cheesemonger of the Year — In 2022, with only eight months in the trade and one year left under the age cap, Jessica entered the Academy of Cheese-run competition. She made the finals, got humbled by the general knowledge round, and came away with a confidence boost and a network that stuck with her.
🥇 Cheesemonger of the Year, Farm Shop & Deli Show — This year, that same foundation carried her to the top award in the industry — recognition for the shop she's built, the team she's trained, and the way she talks about cheese with people who've never been past a supermarket counter.

Three steps, one throughline: invest in the fundamentals, put yourself forward, and the rest follows.
