Peach and Chocolate Bake
Ingredients
200g Plain Dark Chocolate
125g Unsalted butter
4 Medium eggs, separated
125g Caster sugar
425g can of peach slices, drained
ยฝ tsp ground cinnamon
1 tbsp Icing sugar, sifted to decorate
Method
1. Preheat the oven to 170 deg/gas mark 3, 10 mins before baking. Lightly oil a 3-pint ovenproof dish.
2. Break the chocolate and butter into small pieces and place in a small heat proof bowl set over a saucepan of gently simmering water. Ensure water is not touching the base of the bowl and leave to melt. Remove the bowl from the heat and stir until smooth.
3. Whisk the egg yolks with the sugar until very thick and creamy, then stir the melted chocolate and butter into the whisked egg yolk mixture and mix together lightly.
4. In a clean bowl whisk the egg whites until stiff, then fold 2 tablespoons of the whisked egg whites in the chocolate mixture. Mix well, then add the remaining egg white and fold in very lightly.
5. Fold the peach slices and the cinnamon into the mixture, then spoon the mixture into the prepared dish. Do not level the mixture, leave a little uneven.
6. Bake in the prepared oven for 35-40 minutes, or until well risen and just firm to the touch. Sprinkle the bake with the icing sugar and serve immediately with ice cream or cream
