Where it all began!

After visiting the store in Truro back in 2023 and meeting Ruth Huxley, I was inspired to replicate her wonderful books in East Lothian and thus Land,Sea & Hills began!

Fast forward to 2026 and what a delight it was to present Ruth with her own copy of the book she inspired!

This shows how invaluable learning journeys are and collaborating with other food groups within Scotland and the UK! Thank you and for facilitating these wonderful trips.

Ever wanted to know how to make bread?

We’ve got you - here’s a quick and easy recipe for soda bread 🥪

(tip - see how to use use lemon juice to curdle the milk to make buttermilk at the end of the caption)

🍞 Simple Soda Bread 🍞

Ingredients

🌾 200g strong wholemeal bread flour
🌾 100g strong white bread flour, plus more for dusting the loaf
🌾 150g plain white baking flour
🌾 50g medium oatmeal, plus a little more for dusting the loaf
🥄 1 rounded tsp bicarbonate of soda
🧂 ½ tsp fine salt
🍯 1 rounded tsp muscovado sugar
🥛 400ml buttermilk

Makes 1 loaf

Method

🔥 Preheat oven to 200C/180C fan/gas 6
🥣 Mix all the dry ingredients in a bowl together
🥛 Add the buttermilk and mix with your fingertips until the mixture comes together and leaves the sides of the bowl clean
🌾 Place the dough on a lightly floured work surface
🤲 Knead it gently for 2 minutes into a smooth ball and place on an oiled baking sheet, patting the surface flat
🔪 Score the round into 4, using a sharp knife almost right through the dough to the baking tray
✨ Sprinkle the surface with a little extra white flour and oatmeal
🔥 Place in the centre of a hot oven for 30 minutes
❄️ Remove and cool on a wire tray before serving, while still warm if possible

✅ You’ll need
🥛 Milk
🍋 Lemon juice

👩‍🍳 How to make it
👉 For every 240ml milk, add 1 tbsp lemon juice
👉 Stir gently
👉 Leave to stand for 5–10 minutes
👉 The milk will slightly thicken and curdle
✨ Ready to use as buttermilk in baking

2. Fred Berkmiller Chef at L’Escargot Bleu
Fred swapped the Paris kitchens for Scottish pasture over 20 years ago. As chef owner of Edinburgh’s L’Escargot Bleu restaurant, he’s moving the restaurant ever closer to complete self-sufficiency in vegetables and herbs, growing produce at Monkton Gardens, in East Lothian 🐌

3. L’Art du Vin Richard Bouglet
L’Art du Vin isn’t your typical wine merchant. Richard sources from small producers, biodynamic growers and fair-trade vineyards making wine with heart 🍷

4. JK Thomson
A fourth-generation family business keeping local craft alive at their Musselburgh smokehouse, with oak-smoked haddock, salmon and mackerel made the traditional way 🐟

5. East Lothian Climate Hub
Their Food Growers Collective helps local producers learn from one another, sharing knowledge, resources and hope for a more sustainable future ♻️

6. Sea Buckthorn Scotland
Kirstie freezes the wild coastal berries straight after harvest, keeping every drop of their natural goodness. Pressed in small batches, the juice is rich in omega oils and vitamins, proof that real superfoods grow right here in East Lothian 🌿

7. Lobster Shack
With direct access to the freshest catch from harbour boats, the team prepare lobster, crab and haddock to order, using suppliers all found nearby 🦞

8. Bonnie Wee Bothy
Recycled materials, home‑made compost and smart, sustainable design keep this family‑run Bothy green in every sense 🏡
