As no brewing is taking place at Independence Matter I have done some home brewing, with 5 of us at home the stocks are going down. We do have a good amount of homebrew some of it 5 years old aged well and still very drinkable. So I have had to use Kits from Goodlife Homebrew who are doing deliveries and also you can pick up from their shop as my full mash kit is at the Brewkery. A Ginger Beer brewing and also a Belgian Dubbel both fermenting in the Brew shed looking at Casking the Ginger beer and bottling the Dubbel next week.

As the Independence Matters Centre closed on Friday last week we have had to sort out the brew of Sir Toby's ale. Last Friday before the shut down the brew had gone down to 1015 so looking at 4% abv. I racked 9 Gallons into a Firkin borrowed from St Peter's Brewery and also filled 2 Cornelius kegs one 19 litres and the other 23 litres, these and the cask are now sitting in the cold store at St Peter's brewery.
The plan was to have the 9 gallon cask at the City of Ale Launch Party but this now seems very unlikely and Sir Toby's bar was to have the 2 Cornelius kegs for sale on his bar during the City of Ale week.
The remainder of the beer was racked into 25 litre plastic pressure barrels and it will sit in these until such time as we are able to get in and bottle it.
Obviously we won't be brewing for a while and I will keep you informed when this will be and also when we will be open at the Centre for the sale of those beers which are already bottled and are in our storage.

Following on from last weeks busy week of visitors this week we were joined by Toby from Sir Toby's Beers on Norwich Market to brew with us. Toby joined in at all stages of the brewing process and willing volunteered to dig out the Mash Tun for us. This beer is being produced and sold as part of Toby's involvement with Norwich Round Table and will help to raise awareness of, and funds for the Brewkery.
The beer brewed was a 200 litre brew of a 4% Table Beer of Pale, crystal and wheat malts with Equanot and American Hops being used. We will be putting some of this brew into a cask which will be at the City of Ale Launch Party on Thursday 21st May at the Waterfront. Tickets for this event are available from the City of Ale Website.
Sir Toby's will also have some of this beer kegged and this will be available on their stall during the City of Ale. The remainder will be bottled and Sir Toby's will be selling this on for us.
We will be having a stand at the City of Ale Launch Party giving tasters of Beer and some of our baked goods, more on this nearer the time.

The Blonde Ale brewed 2 weeks ago bottled yesterday at 5.5%, 231 bottles filled.
This week we had our inspection by Environmental Health and we are pleased to say that they gave the Brewkery a rating of 5 which is very good.
Also we had a visit from Paul Dickson a Norwich Tour Guide who will be, as part of the Tours he does for the forth coming City of Ale, having our beer available for those taking part in some of his Tours.
Next week we will be starting our City of Ale brewing more on this next week.

Bottling time a the Brewkery, this week we bottled the American Pale Ale finished at just over 5%, 240 bottles filled capped and labelled. This time we used our new bottling tank which made life lot eerier once we got the pump to work, also new fast on couplings made it a lot easier. Next week we will be bottling the Blonde brewed next week.
We now have a design for a leaflet which has to be proof read. Next week some pictures and also hopefully more news on City of Ale.

Following last week's brew of APA we have left it to ferment another week being as the brewery is not heated and we need to make sure that it has fermented out. So this week we brewed again this time the Blonde Ale which will be bottled in 2 weeks time.
Following my attendance at the City of Ale meeting last week I am pleased to say that we now have plans for a cask of our beer to be at the Launch Party on Thursday 21st May and we will be having a stand there promoting the Brewkery. We are also hoping if all goes to plan to have some of our beer in casks in some Norwich Pubs over the City of Ale week. More details on this once we have these confirmed.

Last week 3 weeks after brewing the Golden Ale was bottled, tried today 4th Feb and looking good. Today's brew American Pale Ale, pale malt with a touch of crystal, Equanot Motueka and Simcoe bittering hops with Motueka and Simcoe as Aroma hops. OG 1055 so looking at 5.5%. Plan is now the weather is cooler to leave to ferment out for 2 weeks and then bottle, so next week looking at brewing rather than bottling.

Now back at the Brewkery after the Christmas break and brewing this week. Despite the closed time thinks have been busy behind the scenes, Bill managed to obtain another grant for the Brewkery and we have been able to purchase another oven, a stand for our bottling tank, new cupboards giving more storage space and new hydrometers.
This week the first brew of the year was a Golden ale and if it ferments through, depending on the temperature of the brewery we will be bottling next week, however if it does not ferment out completely we will postpone bottling to the following week.
As well as new equipment we have some new hops to brew with, Cascade, calypso, East Kent Goldings and Pacific gem, many thanks to Charles Faram Hop Merchants for giving us a discount on these.
For this year we are looking at producing and selling more beer and with this taking on more people for the centre to help in the Brewkery. We are also looking at some collaboration brews, more details on this when it happens, and also getting our beers available at the City of Ale in Norwich.

Last weeks brew of Brown bottled 86 litres in total fg 1011 so looking at 4.5%. New heavy duty Crown Capers purchased and used, much better very heavy and sturdy, well worth the price. Labels have been ordered so in the next few weeks we will be labelling. Bill spent the morning baking cheese scones, chees straws, fruit scones and buns for a prize giving lunch at the centre today so we had to do some quality control, hard work but someone had to do it. Next week looking at brewing the American Pale Ale.
