Easy Slow Cooker Veggie Stew – 15p veg to the rescue! 🥕🥔🥦
Spotted those ridiculously cheap Easter veg in the shops? Or picked up a freebie from The Pantry? Here’s a super easy, budget-friendly slow cooker recipe using just a few bits – most under 15p!
You’ll need:
2 carrots 🥕
2 potatoes 🥔
Half a swede 🥣
A few florets of broccoli 🥦
1 onion (or spring onion bunch if that’s what you’ve got!) 🧅
1 veg stock cube + 500ml boiling water 🧂
Optional: herbs, garlic, a tin of beans or lentils for extra protein
Method:
1. Peel and chop everything into chunks.
2. Chuck it all in the slow cooker.
3. Pour over the stock, add herbs or seasoning if you like.
4. Cook on low for 6–8 hours or high for 3–4.
5. Mash slightly or leave chunky – up to you!
Serving suggestions:
With crusty bread (loads of loaves at The Pantry) OR Over rice.
Add a splash of cream or sprinkle of cheese on top for a treat.
Blend for a hearty soup 😋
Feeds 3–4 for pennies.
Freezes like a dream! ❄️
