If you're looking for a tasty salad idea, I have just whipped up a vibrant and delicious dish! 🌿✨ Packed with spinach, chickpeas, beetroot, carrot, cabbage coleslaw, topped with crunchy chopped walnuts and a sprinkle of homegrown sprouted mung beans. I then drizzled it all with a tangy olive oil and balsamic vinaigrette. Healthy, fresh, really filling and even better it's packed with a variety of vitamins helping to boost my immunity and skin function!

🌟 Buddha Bowl Alert! 🌟

I have just made a colorful Buddha bowl packed ful! 🥣

✨ Here’s what’s I put in it (and it was judged by eye so the amounts varied to what I fancied!)

Brown Rice: A hearty base.
Cherry Tomatoes: Sweet bursts of flavour! 🍅
Olives: A nice briny touch! 🫒
Chickpeas: A boost of protein! 💪
Cooked Beetroot: Vibrant and earthy!
Sun-Dried Tomatoes: Sweet and savoury!
Chopped Walnuts: Crunchy texture!
Red Pepper: Adds a nice crunch! 🌶️
Pomegranate Seeds: Juicy and tangy!

I put all of the ingredients onto a bed of spinach and rocket, topped with hummus and alfalfa sprouts. The sprouts have been really easy to grow which I will show in my next post! I then finally added some homemade salad dressing which is:
salt and pepper
2 garlic cloves
Ground flax seeds
dates to sweeten x 4
Nuts/seeds of choice
water to thin down
splash cider vinegar
2 lemons

A few days ago, my neighbor gave me a large marrow because they had so many, and I was trying to figure out what to make with it. I came across a recipe for marrow, coconut, and curry soup and decided to give it a try 🥥🥣 It turned out really lovely, easy to make and very tasty! 🌱 It’s also a great option for a budget-friendly lunch, especially with some crusty bread on the side. Definitely worth trying! Probs needed a herb dropped on top for presentation!😋
