The Foundation is proud to bring to the Willis Museum Bee exhibition on Sunday 26th April Chris Park, who will be giving a very entertaining talk on “Beekeeping through the Ages”.

Synopsis of Chris Park talk:

A journey through some of the mysterious and mellifluous history of bees and people. Join an entertaining saunter through our earliest honey hunting endeavours to tree beekeeping and honey forests, log hives and bears, bee skeps and baskets, boxes and eureka moments, and all the imaginative ways we have bothered bees, and endeavoured to help them, so we might harvest some of their golden treasures to this present day’.

🍯 Where’s the Honey Mummy Recipe 🍞

This festive season, we’re sharing a wholesome Honey Oat Bread from the Charles Butler Foundation — soft, slightly sweet, and packed with oats. Perfect for breakfast, toast, or a festive snack!

✨ Why we love it

Natural honey adds a gentle sweetness, while oats give it a lovely texture. This no-knead bread is easy to make and deliciously aromatic straight from the oven.

👩‍🍳 Recipe

Ingredients
• 3 cups + 2 tbsp (410g) bread flour, divided
• 1 cup (85g) old-fashioned or quick oats (not instant)
• 1½ tsp (4g) instant or active dry yeast
• 1½ tsp salt
• ½ tsp ground cinnamon
• 1½ cups (360ml) water, close to room temperature (~21°C)
• 6 tbsp (128g) honey
• 2 tbsp (30ml) vegetable oil (or other neutral oil)

Method

1️⃣ In a large bowl, whisk together 3 cups (390g) bread flour, oats, yeast, salt, and cinnamon. Set aside.
2️⃣ In a medium bowl or jug, whisk water, honey, and oil together. Pour into the flour mixture and stir gently until combined. Dough will be heavy and sticky — do not overwork.
3️⃣ 1st rise: Cover tightly with cling film or foil and leave at room temperature for 12–18 hours, until nearly doubled.
4️⃣ Grease a 9×5-inch loaf tin. Gently fold in remaining 2 tbsp (20g) bread flour. Using lightly floured hands, shape dough into a loaf and place in the tin. Score the top with a sharp knife or bread lame.
5️⃣ 2nd rise: Loosely cover and leave at room temperature for 1 hour until slightly risen. Preheat oven to 191°C / 375°F.
6️⃣ Bake for 50–60 minutes, tenting with foil after 30 minutes if browning too quickly. Loaf is done when it sounds hollow when tapped or reaches 90°C (195°F) internally.
7️⃣ Cool in the pan on a wire rack for at least 15 minutes before slicing.

🫙 Store at room temperature for up to 3 days, or in the fridge for up to 10 days.

🍯 Where’s the Honey Mummy Recipe 🍫

This festive season, we’re sharing Honey Nut Oat Bars from the Charles Butler Foundation — crunchy, wholesome and naturally sweetened. Perfect for a healthy snack or to pack into lunchboxes!

✨ Why we love them

Toasted oats, nuts, seeds, dried fruit and a touch of honey come together in bars that are deliciously chewy, nutty, and satisfying. Great for little ones (and grown-ups!) alike.

👩‍🍳 Recipe

Ingredients
• 120g rolled oats
• 30g unsweetened puffed rice (not crisped rice cereal)
• 75g toasted flaked almonds
• 25g mixed seeds
• 130g stoned dates, chopped
• 50g dark chocolate chips (optional)
• 40g raisins or dried berries of your choice
• 100g crunchy peanut butter
• 90g honey

Method
1️⃣ Preheat the oven to 180°C / 160°C Fan / Gas 4. Line a 20cm or 23cm square tin with baking paper.
2️⃣ Spread the oats on a baking tray and bake for 10 minutes until fragrant and toasted. Set aside to cool.
3️⃣ In a large bowl, mix together the toasted oats, puffed rice, almonds, seeds, chopped dates, chocolate chips, and raisins.
4️⃣ Melt the peanut butter and honey together in a small saucepan over gentle heat, stirring until combined.
5️⃣ While still warm, stir the peanut butter and honey into the oat mixture, ensuring all the oats, nuts and fruit are coated.
6️⃣ Tip the mixture into the lined tin and press firmly into an even layer. Freeze for 20 minutes to firm up.
7️⃣ Cut into 15 bars, wrap individually in cling film, and they’re ready for lunchboxes or snacks!

🍯 Where’s the Honey Mummy Recipe 🍰

This Christmas, we’re sharing a classic 'Yummy Honey Cake' from the Charles Butler Foundation — rich, comforting and beautifully sticky. Perfect for cosy afternoons or a festive treat with family.

✨ Why we love it

Golden honey, dark muscovado sugar and a soft, melt-in-the-mouth crumb, finished with a glossy honey glaze. Simple, timeless and delicious.

👩‍🍳 Recipe

Ingredients
• 250g clear honey (+ 2 tbsp extra to glaze)
• 225g unsalted butter
• 100g dark muscovado sugar
• 3 large eggs, beaten
• 300g self-raising flour

Method
1️⃣ Preheat the oven to fan 140°C / 160°C / gas 3. Butter and line a 20cm round loose-bottomed tin.
2️⃣ Melt the butter, honey and sugar gently. Once liquid, boil for 1 minute, then leave to cool for 15–20 minutes.
3️⃣ Beat in the eggs. Sift the flour into a bowl, add the honey mixture and beat until smooth.
4️⃣ Pour into the tin and bake for 50–60 minutes until golden and springy.
5️⃣ Turn out, warm 2 tbsp honey, brush over the top for a sticky glaze and leave to cool.

🫙 Keeps for 4–5 days in an airtight tin (if it lasts that long!).

They don’t just sit around – they retreat to the hive and carry on working behind the scenes, tending to the honey and looking after the colony until the sun comes back out. ☀️🍯
