Chef Alain is a Michelin star chef (2 Michelin stars to be exact) from Fontainebleau, France. He is a clear-eyed Frenchman who began his illustrious career in the art of culinary brilliance at the age of 18.
His French restaurant, Chef Alain Bistro Brasserie, is conveniently located in BGC. Opened in March 2024, it's the hottest French ticket in Manila. It positively bursts with fine French food, wines, and Parisian ambiance and remains an exclusive, hidden gem tucked away on the Mezzanine level of the Active Fun building, only steps away from Bonifacio High Street.
On August 31st, 2024, he generously donated his Michelin-starred skills and time to the Philippine cultural heritage exhibition grand opening ‘Trajectories and Movements of Filipino People’ at Alliance Française de Manille in Makati. A lover of the fine dining experience and the Philippines, his participation in the event was an honor for all in attendance.
For Pamana's exhibition of Philippine culture, Chef Alain created modern-style food using primarily ingredients which would have been available to ancient Filipinos. The Pamana Project co-founder, Dr. Hermine Xhauflair, assisted him with ingredient selection based on archaeological evidence of what food sources ancient Filipinos were consuming in the past. As a renowned archaeologist and anthropologist specializing in ancient and traditional Philippine cultures, Dr. Xhauflair was the perfect person to collaborate with Chef Alain in this creative and delicious culinary adventure.
The result was Chef Alain's creations being a resounding success. The tastes, textures, and flavors displayed a deft blend of French culinary panache with ancestral Philippine foods.
Guests of the event were treated to the following:
- A ceviche made from the huge, meaty, and frankly delicious fish called Lapu-Lapu (or Grouper), accompanied by tender palm hearts and coconut milk with chile;
- Ravioli filled with vibrantly purple ube, delicately wrapped in fine slices of the sinkamas, a kind of turnip;
- A dense caramel-creme cake, lightly salted and topped with the earthy Pili nut, an almond-like ancient source of healthy fat and protein native to the Philippine archipelago.
Each dish was enjoyed by our guests with delight and anticipation for the master chef’s next offering.
