Recipe for a typical Portuguese sweet. Sweet Rice

2 litres of semi-skimmed milk,
1 cup of short-grain rice,
1 cup of sugar,
1 cinnamon stick,
1 lemon peel,
1 pinch of salt,
4 egg yolks

Preparation

Bring the milk to a boil with the lemon zest, cinnamon stick, and a pinch of salt. Once it starts boiling, reduce the heat and add the rice, stirring regularly with a wooden spoon to loosen the rice and prevent it from burning. When the rice is cooked, add the sugar, stir, let it cook a little longer, and then add the beaten egg whites, stirring constantly for about 2 minutes. Remove from the heat and place in a deep dish and decorate with cinnamon.

Classic Lamington Squares with Optional Cherry Filling
About this recipe
These soft Australian-style lamingtons are made from light vanilla sponge cubes coated in rich chocolate icing and rolled in fine desiccated coconut. Traditionally served plain, they can also be upgraded with an optional cherry filling for a fruity surprise inside.

Ingredients
Sponge cake
• 4 large eggs (room temperature)
• 150 g caster sugar
• 1 tsp vanilla extract
• 120 g plain flour
• 1 tsp baking powder
• 30 g melted butter
• 2 tbsp milk
Chocolate coating
• 250 g icing sugar
• 30 g cocoa powder
• 120 ml hot water
• 30 g melted butter
Coating
• 200 g desiccated coconut
Optional filling
• Cherry jam or cherry compote (for layering or sandwiching the sponge)

Instructions
1. Bake the sponge
Preheat the oven to 180°C (350°F) and line a square baking tin with baking paper.
Whisk eggs and sugar until the mixture becomes pale, thick, and fluffy. Add vanilla extract.
Sift in flour and baking powder, then gently fold into the egg mixture.
Stir in melted butter and milk until just combined.
Pour into the tin and bake for 25–30 minutes, until golden and springy to the touch.
Allow the sponge to cool completely before cutting.

2. Optional filling step
If using cherry filling, you can either:
• spread a thin layer between two sponge layers and sandwich them together, or
• skip this step for a classic plain version
Cut the sponge into even squares.

3. Chill
Place the squares in the fridge for about 30 minutes to firm up before coating.

4. Make the chocolate coating
Mix icing sugar and cocoa powder in a bowl.
Add hot water and melted butter, whisking until smooth and glossy.

5. Coat the lamingtons
Dip each sponge square into the chocolate mixture, letting excess drip off.
Immediately roll in desiccated coconut until fully covered.
Place on a rack and allow to set.

6. Finish
Let them rest for at least 1 hour before serving for the best texture and flavor.

Githeri Recipe*
Githeri (Maize and beans ) is a beloved Kenyan staple in most communities.

*Ingredients*
-2 cups fresh green maize (corn kernels)
-1and half cups beans (any variety but red or rose coco have a nice outcome)
-1 large onion-chopped
-2 tomatoes-chopped
-2 medium diced Irish potatoes
-1 diced carrot
-1 green pepper chopped
-Fresh corriander -chopped
-2 cloves of garlic, (optional)
-1 teaspoon grated ginger (optional)
-2 tablespoon cooking oil
-Salt to taste
-1 tsp curry powder or mixed spices (optional)
-Water

Instructions
1.Prepare the maize and beans-
Boil them together in water until soft (about 1 hour).
2 .Heat oil in a sufuria (cooking pot).
Add onions and stir until golden brown.
3.Add tomatoes and cook until they soften and form a thick sauce
4.Add diced potatoes and cook until slightly soft.
5.Add garlic and ginger, cook briefly
6.Add chopped tomatoes
and cook until they soften and form a thick sauce.
7.Add the boiled maize and beans mixture (drained if too much liquid).
Stir well
8.Add salt and optional spices.
9.Simmer for 10 minutes for the flavors blend.
10.Add corriander and green pepper ,stir well and and cook for 1 minute

*Serving*
Garnish with grated carrots.
Serve hot on its own or with:
Avocado slices 🥑
