This month the USDA-ARS in collaboration with Hop Quality Group released the newest USDA-ARS public hop variety, 'Thora', formerly recognized as HQG4. Born of a collaborative effort between over 50 U.S. craft breweries, Thora links the needs of craft brewers and growers.

Thora is defined by notes of passionfruit, guava, grapefruit, and stone fruit with resinous undertones. The variety boasts early to mid-season maturity, disease resistance, and competitive yields. Named after the Old Norse word Þórr, meaning “thunder”, Thora delivers a powerful sensory experience from field to glass.

Day 4 - Seminar Day at Hop & Brew School

Seminar Day at Hop & Brew School was an inspiring deep dive into the science and craft of brewing with hops. Over the course of the day, our delegation moved from the history of U.S. hop farming to the latest research shaping the industry, connecting each stage of knowledge with practical skills for brewers.

We began with hands-on hop assessment, learning how to evaluate quality traits that directly influence aroma and flavor in beer. From there, we explored a Research Roundup that covered everything from defining “dank” to the role of survivables, yeast interactions, and emerging oil products—insights that are already informing new recipe designs worldwide.

The session on new variety development showcased the innovation pipeline, where cutting-edge breeding work translates into tomorrow’s iconic hop flavors. Later, we linked science to the glass through beer sensory analysis and recipe development, guided by expert brewers who highlighted how small adjustments can unlock entirely new experiences for consumers.

A panel on innovation and consumer trends tied it all together, providing real-world perspectives on how evolving tastes are reshaping the market. We closed with a mock selection, giving participants the chance to apply their new knowledge in an exercise that mirrored real-world decision-making in the supply chain.

It was a day that combined theory, practice, and vision—empowering brewers to make better, more informed choices in sourcing and recipe design. Immense thanks to Yakima Chief Hops for leading such a comprehensive and engaging program.
