We are overwhelmed with our ongoing training at FOTAPS FOUNDATION , Last week, our amazing students were drilled on the fondant, cake trimming, cake layering,cake crumb coating and cake covering with fondant, where they did their very first wedding cake, both traditional and civil wedding cakes. The journey was tough but they did it well. The coming weeks are going to be a little challenging as individuals will take turns to craft different cake designs, therefore, let's stay tuned for more exciting work from our students

We are quite excited that our youth empowerment training is going well as planned.
Last week we took time to train our young girls and women on the baking and decoration of cup cakes , where all of them took turns to create beautiful different designs.
The way the training is going, it is certain that our goal of "Poverty alleviation" will be 20% attain with this 8th batch.

Finally, our 3 months youths empowerment training on cakes and pastries has started. Day one was quite exciting as students enjoyed every step of the activities.
Day two saw us making
Drop doughnuts
Banana 🍌 cake
Scotch egg
Remember, our goal is to alleviate poverty through vocational training and we are expecting that at the end of each training month, they start creating their own businesses from what they have learned, with the guidance of our orientation team.

We love to empower, acquire a skill in pastry making now, to better arm for the future
Norina Chin chin
FOTAPS ; HELPING ONE TO FEED MANY, FOR A SUSTAINABLE FUTURE

Ingredients

All purpose flour…….4 cups
Sugar………………….1/2 cup
Baking powder…..1 tsp
Salt……………….1/4 tsp
Butter…………….1/2 cup
Eggs……………….1large or 2 (optional)
vanilla extract … 1tsp
Milk………………1/4 cup
Nutmeg… … … .. ½ tsp
Water… .. … … . ½ cup
Oil for frying … … 1 litter

Method / procedure

Step 1. Combine Dry ingredients
In a large clean bowl, combine all dry ingredients ;the flour, sugar, baking powder, and salt. Mix well.

Step 2. Add Butter:
Add the softened butter to the dry mixture and using your fingers or a pastry cutter to rub the butter into the flour until the mixture resembles bread crumbs.

Step 3. Add Eggs and Flavorings:
In a separate bowl, beat the eggs and mix in the vanilla extract, then pour into the flour mixture and combine well.

Step 4. Add water/milk to form the Dough:
Gradually add milk/water, a little at a time, until the dough comes together. It should be firm but not sticky. Need it till the dough is smooth. Note that you may not use all the milk.

Step 5. Roll Out the Dough:
On a lightly floured surface, roll out the dough to about 1/4 inch thick. Use a sharp knife or pizza cutter to cut the dough into small squares or rectangles.

Step 6. Heat Oil:
In a deep frying pan or pot, heat oil over medium heat. You can test if the oil is hot enough by dropping a small piece of dough into it; if it sizzles and rises to the surface, it’s ready.

Step 7. Fry Chin Chin:
Carefully add the cut dough pieces into the hot oil in batches, being careful not to overcrowd the pan. Fry until they are golden brown, turning occasionally for even frying

Step 8. Drain:
Once fried, use a frying spoon to remove the chin chin from the oil and place them on paper towels/ table napkin, to drain excess oil.

Step 9. Cool and Store:
Allow the chin chin to cool completely before storing them in an airtight container.

Tips

For added flavor, you can incorporate more nutmeg or cinnamon into the flour mixture.

Chin chin can be made in different shapes—feel free to experiment!

Adjust the sweetness according to your preference.
