Senior Teen Chef Aiden brought a sweet side to the Celebrity Chef Challenge!

“For Aidens celebrity chef challenge he chose one of Gordon Ramseys dessert recipes, pavlova for two with Raspberry curd. He started off making the pavlova which involved seperating egg whites and whipping them with sugar, cornstarch, vinegar, and vanilla till stiff peaks formed. After putting the mixture on a lined cookie sheet, it was ready to be baked. While that was in the oven he got busy with the raspberry curd! He combined raspberries, sugar, lemon juice, and the egg yolks he seperated earlier to make a delicious smooth curd to fill the pavlova. The finishing touch was some fresh blueberries and chocolate covered strawberries from the market to place on top, it was a big hit!!”

We love Senior Teen Chef Esmes Celebrity Chef Challenge 🌟

“The Celebrity Chef that inspired my meal for the August Kootenay Teen Chef Club challenge is The Barefoot Contessa Ina Garten I picked Ina because I have been watching her show since I was 3 years old.

I made three of her recipes. Chicken Piccata, Garlic and Herb Tomatoes and Lemon Capellini. I used greens from Earthy Organics for a lemon and olive oil dressed side salad.”

Obsessed with this flavourful offering from Senior Teen Chef Stella 🌟

“For Stella’s year 3 celebrity chef inspired challenge, she chose 3 recipes from Antoni Porowski. She made cauliflower steaks with tumeric and almonds, sheet pan chicken with grapes and fresh rosemary, and roasted sweet potato fries with chimichurri. The cauliflower and garlic were from Super C's farm Trail Farmers Market , and the red onion was from Madelaine Jolin “

Last night our members were treated to a zoom cooking class, learning how to make Okonomiyaki -a savoury Japanese pancake known as a top notch comfort food. Our instructor with Erika A., a dear friend of the Chef Club who made her way to Trail BC by way of Tokyo a few years ago.

members were emailed a shopping list in advance and treated to some Japanese ingredients by our instructor. We then ran the class over Zoom as the youth prepared the meals in their home kitchens with their own kitchen tools, and then got to see their families enjoy the dish.

we’d like to thank Erika for being so generous with her donated items and her time in leading our class. Erika also taught us all how to make Otakadon last year and it was a hit.

We have some pretty great friends here at Chef Club headquarters. This year longtime supporters Stoke The Fire in Cawston hooked us up with some of these dried heirloom corns as a for our members and it’s safe to say that they’re a hit! “Thank you for the popcorn Mandi! We made it tonight, it was so so good!!!”

Senior teen Chef Vinnie took inspiration from Bobby Flay for his celebrity chef challenge with delicious results.

Celebrity chef month for Vinnie! He’s been wanting to do this for ages. His celebrity was Bobby Flay and his dish - smoked brisket! We picked up the brisket at the market from Kettle Kountry Farm Trail Farmers Market

He blended spices including ancho chile, dry mustard, paprika, cumin and garlic and rubbed them into the meat to sit overnight. The next day was the marathon of smoking meat. 8 hours around the grill, learned about indirect heat and how important low and slow is for this type of cut.

He rounded out the meal with air fried potato wedges and corn. The meat was perfect! Juicy and tender.

Big news from the Kootenay Teen Chef Club Community!

You may have seen out and about the past month. 2025 Chef Club grad (and rock star) Kaylee’s family have begun this wonderful new business.

Emmie (a fellow KTCC grad and rock star) and Kaylee are now working it with them!

Mums say it has been a great experience for both so far learning to deal with customers and work under pressure, and it was the chef club experiences that had them so confident.

Want to try some Kootenay Cold Rolls? They plan to be at the Trails Incredible Farmers Market on September 5th and on the 11th and 12th as well as a few more pop ups around town before the end of the season. Keep your eyes peeled.

Freshie Teen Chef Cameron fired up the grill for our BBQ Bonanza challenge with delicious results 🔥

“For the BBQ Bonanza decided to tap into the cuisine we were privileged to try while visiting our homestay’s family in Thailand by rocking some Thai barbeque! He sourced the ingredients for the G*i Yang (bbq chicken) marinade from Ferraros in Trail and the Moo Ping (Thai style grilled pork skewers) from Ferraros in Rossland. He slow-cooked the meat on the grill for almost an hour, and paired it with coconut rice. His dad contributed some Asian green beans with almond slivers and garlic, for an amazing Asian themed dinner.”

Freshie Teen Chef Myah has been comin in hot all season- check out her incredible BBQ Bonanza offering 🥩

“For her August BBQ meal, Myah made ribs and roasted vegetables. They were delicious and we all throughly enjoyed our dinner.

In the morning she started by making a dry rub using salt, pepper, garlic and onion powder, brown sugar, thyme and paprika. She rubbed that on the ribs and let them sit in the fridge for a few hours.

At lunch she put the ribs on the smoker at 250F and let the slow cook for hours until they reached 205F internal temp. She then took them off and wrapped them to rest and stay warm. She turned up the heat and put on the Potatoes and Carrots coated in olive oil and veggie seasoning.

When the veggies were almost done, she coated the ribs in a BBQ sauce and threw them back on the grill for the final cook.

She said the hardest part was waiting to eat the ribs because they smelt so good coming off the grill the first time she just wanted to devour them. 😋”
