Meet the Cook behind the Class!
Our next Garden to Plate cooking workshop is happening this Friday! This time we will be led by Lori, as she shares her recipes inspired by her Grandmothers traditional borscht and pickled beets! Here is a bit of her story:
"As a child my Ukrainian grandmother’s farm was a gathering place for the aunts, uncles and cousins most Sundays. We didn’t eat there often since there were too many of us, but we did get to see, smell and taste “Old Country” food.
My grandfather ate borscht every day, but I didn’t appreciate it or eat much of it as a child. I loved pierogi fried in butter with onions and bacon. I made pierogi with Grandma many times when I would stay there.
After learning more of the foods I cannot eat due to sensitivities over the past decade I went back in time to a simpler diet, and made any adaptations needed for food to be less threatening to my day-to-day health.
So now I’m cooking and eating borscht! It’s a bit lighter than Grandma made, but it is delicious, healthful, easy and cheap, and the colours are so beautiful, especially the red fingers! This is a great time of year to make borscht with all the vegetables in season."
