This last Friday, we gathered once again at the Ripley Community Centre kitchen for our "Just Beet It" Borscht and More cooking workshop! Lori shared her Ukrainian culture and taught us how to make the perfect Borscht and how to pickle beets. Stories and laughs were shared as we enjoyed our soup fresh out of the pot. Thanks Lori!

Meet the Cook behind the Class!

Our next Garden to Plate cooking workshop is happening this Friday! This time we will be led by Lori, as she shares her recipes inspired by her Grandmothers traditional borscht and pickled beets! Here is a bit of her story:

"As a child my Ukrainian grandmother’s farm was a gathering place for the aunts, uncles and cousins most Sundays. We didn’t eat there often since there were too many of us, but we did get to see, smell and taste “Old Country” food.

My grandfather ate borscht every day, but I didn’t appreciate it or eat much of it as a child. I loved pierogi fried in butter with onions and bacon. I made pierogi with Grandma many times when I would stay there.
After learning more of the foods I cannot eat due to sensitivities over the past decade I went back in time to a simpler diet, and made any adaptations needed for food to be less threatening to my day-to-day health.
So now I’m cooking and eating borscht! It’s a bit lighter than Grandma made, but it is delicious, healthful, easy and cheap, and the colours are so beautiful, especially the red fingers! This is a great time of year to make borscht with all the vegetables in season."

Our Community Cook Day volunteers were busy huskin' and shuckin' this past Wednesday as we tackled 13 dozen cobs of sweet corn from Stone's Throw Market. Arnie wasted no time telling "corny" jokes and Dianne shared corn preservation tips: did you know you can freeze corn on the cob, still in the husk? Pop it in the microwave for 5 minutes and you've got a taste of summer in the middle of winter.

Joined by Myra, Heather A and Kim, once the corn was husked we stripped the juicy kernels and bagged them for the freezer. We even reserved some of the "corn milk" (the juices that are leftover on the cobs) for our baking recipe. Jen and Cass with their friend Susie from Living Kincardine and District arrived to help make sweet corn muffins. Cass decided some of the muffins should be spicy, so we used dried hot peppers from D&H Newman to give them a little bit of zip. Kim taught Jen the fine art of folding in the corn to the batter, which made them both laugh.

That rounds up our fourth successful Community Cook Day! Many thanks to our wonderful volunteers who commit their time, energy and great humour to these days.

🌽PS: We made a total of 26 bags of corn and 5 dozen sweet corn muffins for and Kincardine Food Bank . Woo hoo!🌽

🍅We had another successful community cook day in Ripley last week!🍅

Board Member Kimberlee was joined by five enthusiastic volunteers to cook salsa and tomato sauce with fresh produce supplied by and heritage garlic from D&H Newman

It was great to see some new faces in the kitchen, listen to Arnie's groan-worthy puns and get veggie freezing tips from Dianne. And our Treasurer Jenn came up with the perfect way to freeze tomato sauce in bags!

All this wonderful food will be donated to our local Kincardine Food Bank and for distribution within our community.

Join us next week for adventures in corn, fresh from Kim's family's farm. We'll be freezing it, baking with it and who knows what else! No experience necessary. Just bring your positive vibes and we'll supply the rest. Send us a DM or email if you would like to help out!🌽🌽🌽
