Équiterre En Équiterre seeks to make the necessary collective transitions towards an equitable and environmental

Equiterre helps build a social movement by encouraging individuals, organizations and governments to make ecological and equitable choices, in a spirit of solidarity. We see the everyday choices we all make - food, transportation, housing, gardening, shopping - as an opportunity to change the world, one step at a time. Our consulting, awareness-raising and research projects offer concrete solution

s to promote human and environmental health, social justice and community development at home and abroad. We also advocate publicly on environmental and social issues, encouraging decision makers to adopt laws and practices that will contribute to a society that is sustainable and fair. Earth Summit, Rio de Janeiro, 1992: Activists from around the world gathered to discuss solidarity and respect for the environment. Several Quebec participants decided to create a citizens' group to propose concrete solutions to such problems as pollution, large scale industrialization, and the exploitation of workers in the South. In 1993, they established ASEED (Action for Solidarity, Equity, Environment and Development). It obtained nonprofit status in 1995 and changed its name to Equiterre in 1998. Since the beginning, Equiterre has relied on a dedicated team of specialists from a variety of fields. With the help of citizens, organizations and governments, it develops projects in agriculture, transportation, fair trade, energy, responsible consumption and climate change.

🫘 Vegetable of the month: Dried beans belong to the legume family. There are around a hundred types, each with different shapes, colours and flavours. In Quebec, we mainly grow white beans, azuki beans, kidney beans, black beans and cranberry beans.

Dry beans are good for digestive and heart health, and good for the environment because they require less nitrogen fertilizer, which reduces GHG emissions. Because of their large genetic diversity, we can select varieties that are adapted to changing climate conditions.

Did you know?
40% of legumes sold worldwide are grown in Canada.

In the kitchen:
Soak them the day before to reduce cooking time and to facilitate digestion.
Dried beans can be used in both savoury and sweet recipes, including brownies!

🍲 Vegetable of the month: There are four main categories of lentils: brown, green, red and yellow, and specialty lentils. The many varieties make lentils very versatile - they can be eaten in soups, salads, stews and more.

Like other legumes, lentils are rich in protein, making them an excellent alternative to meat. They're also very inexpensive, especially dried lentils.

Did you know?
Canada is the world's largest lentil producer! An increasing number of varieties are being grown in Quebec, like green lentils and beluga lentils.
