🌿 OG Dill White Bean Salad
Fresh, crunchy, and full of bright flavour, this one lets the dill shine.
Ingredients:
1 can white beans, drained & rinsed
1–2 cucumbers, diced
4–5 radishes, thinly sliced
2–3 green onions, chopped
1/3 cup fresh OG dill, chopped
1 clove garlic, minced
2 tbsp olive oil
1–2 tbsp lemon juice
1 tsp Dijon mustard
Salt, to taste
Instructions:
In a large bowl, combine white beans, cucumber, radishes, and green onions.
Add the fresh dill and garlic.
In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, and salt.
Pour over the salad and toss gently to combine.
Let sit for 10–15 minutes before serving to let the flavours come together.
