Hooray for summer students! Thanks to a generous Canada Summer Jobs grant, we're delighted to welcome four summer staff members to the Crieff Hills team. With the support of our local MP Michael Chong and his staff, this important federal program made it possible for us to hire three farm staff and one landscaping staff member this season. Please join us in welcoming Liam, Kyle, Sadye and Ray who will be with us from May through August. We're grateful for the energy, enthusiasm, and hard work they bring to our community this summer!

Last week our Executive Director had the joy of spending time with our friends at Five Oaks Education and Retreat Centre, leading three days of learning, reflection, and conversation with ministers from the United Church of Canada. Centered around the theme, 'Rooted and Rising,' the gathering made space for deep reflection, meaningful connections, plenty of laughter and renewed hope for ministry. We are grateful for the warm hospitality offered by our friends at Five Oaks.

Poor Sorrel: for such a fabulous plant it's not terribly well known. A member of the buckwheat family, sorrel is a fresh herb with a bright, lemony flavor and is at its best in the spring. Tender young leaves are delicious in salads, but as it grows it can also be cooked in soups and used to flavour fish. It is also rich in fiber, antioxidants, and vitamins. We are growing red-veined sorrel in the Chef's garden and it is making our salads more beautiful than ever!

Meals at Crieff Hills begin long before they reach the table. Our farmers and chefs collaborate every day, selecting produce varieties and planning harvest times. Their careful work means that the ingredients inspire creative menus, less food goes to waste, and guests enjoy the very best of the season. Go team!

We have some special baby trees in our forest! After removing over 1000 dead Ash trees from our forest, we have been hard at work replanting out along the red trail. Almost all of the Ohio Buckeye saplings we planted last year made it through the winter, and we're almost ready to start planting more oak, walnut and bladdernut trees. We are grateful for the support of Wellington County's Green Legacy program, the largest municipal tree planting program in North America.

Others inspire us, information feeds us, practice improves our performance, but we need quiet time to figure things out, to emerge with new discoveries, to unearth original answers. ― Ester Buchholz

Can I eat that garnish? Yes you can! Our culinary team loves to make food beautiful and our gardens yield a wide variety of edible flower ingredients to make that possible. Staff pick blooms every day from the nearby Chef's Garden, like these purple and yellow violas, and add them to desserts, salads and entrees.

*Never eat any plant unless you are 100% certain it has been correctly identified as edible.

New! We are celebrating World Earth Day by announcing Earthbound: Climate Justice Retreat August 28-30. This transformative weekend retreat is dedicated to the intersection of faith, climate justice, and sustainable living with Dr. Grace Ji-Sun Kim, renowned theologian and author. Joined by educator and farmer David Alexander and the Crieff Hills farm staff, this retreat is designed to be more than a lecture series. It is an immersive “learning lab” with the land as a classroom, theological discussion and dedicated time for mindful presence within the natural beauty of the Crieff Hills fields and forest.
