New Brunswick Women's Institute Women working for positive change :
• to help relieve poverty
• to help improve health and safety
• to provide education for all
• to enhance life skills

NBWI is dedicated to informing and educating women about issues and events of concern to them and their communities. It also has a strong homemaking and craft heritage. The NBWI objectives are accomplished at monthly Branch meetings, fund raising events to support the needs of their community, and regular workshops, and social occasions. There are yearly conventions and planning sessions in each d

istrict. Each May all NBWI members are encouraged to attend a Provincial Convention held in various venues around the province. The New Brunswick Women's Institute owns and operates a senior citizens' home in Woodstock that gives priority to former or active members. The NBWI receives some support from the Department of Agriculture, Aquaculture and Fisheries regarding administrative issues arising from the application of the provincial Women's Institue and Institut Féminin Act. Lynn Moore, Manager of Stewardship, Land and Environment Branch, is DAAF's current director for WI issues. There is a Provincial Office in Fredericton with a competent Administrative Officer, Rose D'Amour, who edits and publishes a quarterly provincial newsletter: Home and Country. 🟠 1. CLASSIC CHOCOLATE MOUSSE CAKE

📌 Ingredients

• 1 cup heavy cream
• 200g dark chocolate, melted
• ½ cup cream cheese
• ¼ cup sugar
• 1 tsp vanilla extract
• 1 tbsp cocoa powder
• 1 tbsp gelatin
• 2 tbsp warm water
• 1 cup crushed biscuits
• 3 tbsp melted butter

📌 Procedure

• Mix crushed biscuits with melted butter.
• Press into the bottom of a cake pan.
• Mix gelatin with warm water.
• Beat cream cheese, sugar, vanilla, and cocoa powder.
• Add melted chocolate and gelatin.
• Fold in whipped heavy cream.
• Pour over the biscuit base.
• Chill until set.

🩷 2. STRAWBERRY MOUSSE CAKE

📌 Ingredients

• 1 cup heavy cream
• ½ cup cream cheese
• 1 cup strawberry puree
• ¼ cup sugar
• 1 tsp vanilla extract
• 1 tbsp gelatin
• 2 tbsp warm water
• 1 cup crushed biscuits
• 3 tbsp melted butter
• Fresh strawberries

📌 Procedure

• Mix crushed biscuits with melted butter.
• Press into the cake pan.
• Mix gelatin with warm water.
• Beat cream cheese, sugar, and vanilla.
• Add strawberry puree and gelatin.
• Fold in whipped cream.
• Pour over the biscuit base.
• Chill until firm and decorate with strawberries.

🟡 3. MANGO MOUSSE CAKE

📌 Ingredients

• 1 cup heavy cream
• ½ cup cream cheese
• 1 cup mango puree
• ¼ cup sugar
• 1 tbsp gelatin
• 2 tbsp warm water
• 1 cup crushed biscuits
• 3 tbsp melted butter
• Mango cubes

📌 Procedure

• Mix crushed biscuits with melted butter.
• Press into the bottom of a pan.
• Mix gelatin with warm water.
• Beat cream cheese and sugar until smooth.
• Add mango puree and gelatin.
• Fold in whipped heavy cream.
• Pour mixture over the biscuit base.
• Chill until set and top with mango cubes.

🔵 4. BLUEBERRY MOUSSE CAKE

📌 Ingredients

• 1 cup heavy cream
• ½ cup cream cheese
• ¾ cup blueberry compote
• ¼ cup sugar
• 1 tsp vanilla extract
• 1 tbsp gelatin
• 2 tbsp warm water
• 1 cup crushed biscuits
• 3 tbsp melted butter
• Fresh blueberries

📌 Procedure

• Mix crushed biscuits with melted butter.
• Press into a cake pan.
• Mix gelatin with warm water.
• Beat cream cheese, sugar, and vanilla.
• Add blueberry compote and gelatin.
• Fold in whipped cream.
• Pour over the biscuit base.
• Chill until firm and decorate with blueberries.
