We had another fun morning at playgroup today, and read The Very Hungry Caterpillar book and made some healthy "Apple Pie" Breakfast Biscuits... adapted from FoxFarmHome.com. Recipe is as follows:
βApple Pieβ Breakfast Biscuits
Prep time: 10 minutes (more with children helping! π)
Cook time: 12 minutes
Ingredients
β’ 1 cup rolled oats
β’ 3/4 cup self-raising flour
β’ 1.5 teaspoons mixed spice
β’ 1/4 teaspoon salt
β’ 1/3 cup maple syrup
β’ 3 tablespoons melted butter
β’ 1 egg
β’ 1 cup diced apple
Instructions
0. Preheat oven to 180β¦C
1. In a large bowl, combine the oats, flour, spices and, salt (being careful not to tip the oats into your shoes π)
2. In another bowl, whisk together the maple syrup, melted butter, egg,
3. Mix the wet ingredients into the dry ingredients.
4. Fold in the apple chunks.
5. Scoop the biscuit mix onto a prepared baking tray. Flatten them gently with fingertips. (The mixture is very sticky so donβt handle too much!)
6. Bake for 10-14 minutes. Allow to cool on the tray for a few minutes before transferring to a wire cooling rack.
