Tis the season for fruit cakes! Try our boiled fruit cake recipe from CWA baking cookbook: Jam Drops and Marble Cake.
**CWA of NSW Boiled fruit cake recipe**
Makes: a 20cm round cake.
170g (1 cup) raisins
160g (1 cup) whole pitted dates
170g (1 cup) sultanas
60g (1/2 cup) chopped walnuts
1 tablespoon mixed peel
500ml (2 cups) water
115g butter, cubed
3 eggs
220g (1 cup) sugar
300g (2 cups) plain flour
1 teaspoon mixed spice
½ teaspoon ground nutmeg
1 teaspoon ground cinnamon
2 teaspoons cream of tartar
1 teaspoon bicarbonate of soda
Method
Preheat oven to moderate (180°C). Grease and line a deep 20cm round cake tin. Put the raisins, dates, sultanas, walnuts and peel in a saucepan with the water and boil slowly for 10 minutes. Add the butter. Cool the fruit.
Beat eggs and sugar until well creamed. Add the well-sifted flour to the sugar and eggs, then add the mixed spice, nutmeg and cinnamon, cream of tartar and bicarbonate of soda; then add the boiled fruit and stir well to combine.
Spoon into the prepared tin and smooth surface. Bake for 1 hour – 1 ¼ hours or until cooked when tested with a skewer.
