Coeliac Australia is a national nonprofit organisation providing a range of range of support and information services for people with coeliac disease or those medically required to have a gluten free diet. Our organisation:
• Represents a combined membership base of just under 20,000 people affected by coeliac disease or medically requiring a gluten free diet
• Raises vital funds to support resea

Support is provided through membership, eNews, a quarterly magazine, information .seminars, gluten free food expos, support group meetings and a phone line.

Here’s a bright idea: place sliced mushrooms in direct sunlight before cooking and the UV light helps them produce vitamin D₂.

Slicing them increases the surface area exposed and can substantially increase vitamin D production compared with leaving them whole. Many edible mushrooms, including button, shiitake, enoki and oyster mushrooms, respond to UV exposure.

Research suggests 15–20 minutes of strong midday sunlight can substantially increase vitamin D, but the amount produced varies with the type of mushroom, whether it is sliced, the season, location and intensity of the sunlight.
