• Established ‘Highland Park Tavern’ and ‘Mermaid Beach Tavern’ from the ground up; combined the venues achieve over a 20 million dollars yearly turnover. Involved at every stage, from selection of location, construction project management, coordination of subcontractors, design and fit out implementation, negotiating with council and licencing bodies; through to the management of all operational functions, including:
Strategic Leadership: Created a shared vision for the organisation strengthening the financial status of the business; increasing profitability, growing clientele, substantially increasing the business’s assets, to create a sustainable business model for the future. Financial Management: Led and managed the organisation’s financial systems with monthly collaboration with accountants to set goals and recognise achievements. Project Management / Capital Projects: Planned and managed capital projects to enhance services and attract new business by incorporating 7 bottle shops into the business’s portfolio. Promotion and marketing: Managed and coordinated all marketing, advertising and promotional activities including special events and entertainment promotion and coordination. Staff Management / Development: Communicated a vision and value image for the organisation, as one focused on customer service in both venues and bottle shops. Food and Beverage: Recognising that a successful establishment is measured by the quality of its food and beverage operations, set out to implement high standards for the establishments.
