The CWA Coutts Crossing held their last meeting for the year today at the Coutts Crossing Coronation Hall and the xmas raffle was drawn, the winner was Clint - congratulations on winning the xmas basket full of goodies. From the CWA of NSW baking cookbook “Jam Drops and Marble Cake”.....

Gingerbread Men -

Makes about 20 biscuits.

Ingredients:
125 g butter, softened
100g (½ cup, lightly packed) brown sugar
175g (½ cup) golden syrup
1 egg, separated and 1 egg white, extra
375 g (2 ½ cups) plain flour,
1 tablespoon ground ginger
1 teaspoon mixed spice
1 teaspoon bicarbonate of soda
250 g (2 cups) icing sugar
Lemon juice, to flavour
150g packet Smarties or chocolate buttons, to decorate.

Method:

Preheat oven to moderate (180°C). Lightly grease two large baking trays.
Beat butter and brown sugar in bowl until pale and creamy. Add the golden syrup and 1 egg yolk and beat until combined. Sift together the flour, ginger, mixed spice and bicarbonate of soda. Stir into the creamed mixture.
Turn onto a lightly floured surface and knead until smooth. Cover with plastic wrap and place in the fridge for 30 minutes to rest.
Place the dough onto a piece of baking paper and then cover with another piece of baking paper. Using a rolling pin, roll out the dough and cut out with gingerbread people shapes as needed but keep using the baking paper.
Move the cut shapes over to the prepared trays with a spatula/egg flip and bake for 8-10 minutes. Once baked, let cool for 10 minutes on the tray and then transfer to a covered cooling rack.
To make the icing, beat 2 egg whites until they are stiff peaks, add the sifted icing sugar and combine with a few drops of lemon juice. Place into a piping bag and decorate the ginger-bread people with icing and the Smarties or chocolate buttons.
