If you're looking for an easy option for some baking on this rainy Sunshine Coast day, Leisa Hardess from Caloundra QCWA has you covered. She shared this recipe for custard yo yo's on Mornings with Sarah Howells today.

CWA CUSTARD YO YO'S

Pre Heat Oven 160 degrees fan force

Using hand held beaters. You can use stand mixer too.

MAKE ICING FIRST

60GM SOFT BUTTER

2/3 CUP ICING SUGAR

2 TEASPOONS CUSTARD POWDER

½ TEASPOON VANILLA

Beat the butter until creamy. Add icing sugar, custard powder and vanilla. Work dry ingredients in with spatula first then mix until creamy with beaters. Add to piping bag or small bowl. No need to wash the bowl to make the biscuit mix.

YO YO BISCUITS

125 GM SOFT BUTTER

3/4 CUP PLAIN FLOUR

1/4 CUP ICING SUGAR

1/3 CUP CUSTARD POWDER

½ TEASPOON VANILLA

Beat the butter until creamy. Add flour, icing sugar, custard powder and vanilla. Use a spatula to incorporate the dry ingredients then beat with beaters until it forms a dough. It does look quite crumbly at first for a little while. It will come together.

Line a couple of baking trays with baking paper. Roll desired spoon size into balls, place on tray and press with floured fork on tray. Allow room for spreading.

Bake approx. 15 minutes. Cool before icing.

Match up pairs on tray. Turn one half of the pair over and ice the flat side. Put matching biscuit on top and press down gently. Enjoy!

This week we are celebrating the incredible volunteers who make our Caloundra community so strong and connected.
A special thank you to 𝗝𝗶𝗹𝗹 𝗪𝗮𝗿𝗲, 𝗩𝗶𝗰𝗲 𝗣𝗿𝗲𝘀𝗶𝗱𝗲𝗻𝘁 𝗼𝗳 𝗤𝗖𝗪𝗔 𝗖𝗮𝗹𝗼𝘂𝗻𝗱𝗿𝗮 — our champion volunteer — who has dedicated an incredible 42 years to serving others. From Caloundra Kindergarten and OLR Tuckshop, to the METS Caloundra Surf Club, Lifeline, Rosies, CWA and her passionate work with St Vincent de Paul, Jill’s commitment and generosity have touched countless lives.
Jill, thank you for your unwavering dedication and passion for helping others — you truly embody the spirit of volunteering.
