Our sold-out Sumptuous Lunch was such a beautiful example of what The Highland Woman is all about, and in this video we hear from our founder Scarlett Vespa, alongside two of our wonderful guests, Skye Leckie AO and Joh Bailey, as they share a little of the experience.
It was an afternoon filled with conversation, laughter, live music, beautiful food and, most importantly, genuine connection.

Thank you again to everyone who joined us, and to all those who helped bring the day to life. These are the experiences we love creating for our members and the wider Southern Highlands community.

HIGHLAND KITCHEN

A little taste of spring for the table. 🍑

Sweet peaches, juicy tomatoes, creamy burrata and fresh basil make a salad that’s as lovely to share as it is simple to prepare.

Arrange three sliced peaches and two cups of halved cherry tomatoes over a bed of rocket. Tear two balls of burrata over the top, then add basil and a sprinkle of toasted pistachios. Finish with olive oil, balsamic glaze, flaky salt and cracked pepper.

Serve it at a long lunch with friends, or make it the centrepiece of an easy summer supper. Who would you share it with? 💛
