A Milestone Achievement in 2023

In 2023, the Philippine Chefs Association UAE (PCA UAE) received recognition as one of the Top Performing Organizations in Abu Dhabi, marking an important milestone in the association’s journey.

The recognition reflected PCA UAE’s commitment to bringing Filipino chefs and culinary professionals together, promoting professional development, sharing culinary knowledge, supporting the Filipino community, and creating opportunities for its members.

From its early beginnings, PCA UAE continued to grow—not only as an organization for chefs, but as a community built on unity, service, mentorship, and the spirit of giving back.

🇵🇭👨‍🍳 THE FIRST MEETING — WHERE THE JOURNEY BEGAN 🇦🇪

There was no grand ballroom.
No flashing cameras.
No big stage.
Just a group of Filipino chefs sitting together with one simple dream:
“What if Filipino chefs in the UAE could come together as one?”
That first meeting became more than just a gathering.
It became the beginning of something that would grow beyond anyone's expectations—the Philippine Chefs Association UAE (PCA UAE).
Around that table sat the founding members, each carrying a different story, a different journey, and years of experience in the kitchen.
But they shared one thing:
A passion for Filipino culinary excellence and a desire to give back.

UBE BIKO BALLS WITH YEMA FILLING by Chef Lani.
Chewy Ube-Infused Biko with a Creamy Yema Center

Menu Description: Ube Biko Malagkit filled with delicate yema, served with warm coconut–condensed milk sauce, fresh mango and dragon fruit, and finished with toasted coconut and sesame seeds.

-For the Ube Biko Malagkit-

Ingredients
* 2 cups glutinous rice (malagkit)
* 1 cup coconut milk
* ½ cup water
* ½ cup ube condensed milk
* ¼ cup brown sugar, or to taste
* ½ tsp salt
* 1 tsp vanilla extract

-For the Yema Filling-

Ingredients
* 1 cup condensed milk
* 3 egg yolks
* 2 tbsp butter
* ½ tsp vanilla extract

-For the Coconut–Condensed Milk Sauce-

Ingredients
* 1 cup coconut milk
* ½ cup condensed milk
* 1 tbsp white sugar
* Pinch of salt
* ½ tsp vanilla

-For Garnish-

* Fresh mangoes, thinly sliced
* Fresh dragon fruit, thinly sliced, diced or cut into small balls
* Sesame seeds
* Toasted grated coconut or latik
* Optional edible flowers or fresh herbs for plating

(Method)

Prepare the Yema Balls

1. In a nonstick pan, combine the condensed milk, egg yolks, and butter.
2. Cook over low heat, stirring constantly, until the mixture becomes thick and pulls away from the pan.
3. Stir in the vanilla.
4. Allow to cool until firm enough to handle.
5. Lightly grease your hands and roll the yema into small balls, about 1–1½ cm in diameter.
6. Chill for 15–20 minutes to firm them up.

Make the Ube Biko Mixture

1. Rinse the glutinous rice until the water runs mostly clear.
2. Combine the malagkit, coconut milk, water, ube condensed milk, brown sugar, and salt in a pot.
3. Cook over medium-low heat, stirring frequently, until the rice becomes thick, sticky, and cooked.
4. Remove from heat and mix in the vanilla.
5. Let it cool slightly until comfortable to handle.

Wrap the Yema with Ube Biko Malagkit

1. Take a small portion of the warm ube biko mixture.
2. Flatten it gently in your palm.
3. Place one yema ball in the center.
4. Carefully wrap the ube biko mixture completely around the yema.
5. Roll gently into a smooth ube biko ball, making sure the filling is completely enclosed.

Make the Coconut–Condensed Milk Sauce

1. Combine coconut milk, condensed milk, white sugar, and salt in a saucepan.
2. Simmer gently over low heat for 5–8 minutes, stirring occasionally.
3. Do not let it boil vigorously.
4. Finish with vanilla and set aside.

Béchamel Macaroni
Ingredients – 4–6 servings
250 g macaroni
2 tbsp butter
2 tbsp all-purpose flour
2 cups milk
½ cup grated cheese (cheddar or mozzarella)
½ tsp salt
¼ tsp black pepper
¼ tsp nutmeg (optional)
½ cup cooked chicken, ham, or bacon (optional)
1 small onion, chopped (optional)
For Topping
½ cup grated cheese
Method
Cook macaroni in salted boiling water until just tender. Drain.
Make béchamel: Melt butter, add flour, and whisk for about 1 minute.
Slowly add milk while whisking continuously to prevent lumps.
Cook until thick and creamy, about 3–5 minutes.
Add salt, pepper, nutmeg, and cheese. Stir until melted.
Add cooked macaroni and chicken/ham/bacon if using. Mix well.
Transfer to a baking dish and sprinkle cheese on top.
Bake at 180°C for 15–20 minutes, until hot and golden on top.
