Our mission is to support parents and caregivers of young children ages birth to six who have been diagnosed with Very Early Onset Inflammatory Bowel Disease (VEO‑IBD). This group offers a welcoming space to connect with other families, share experiences, and access education on treatment options, research updates, and day‑to‑day caregiving challenges.

Are you a parent or guardian of a child living with IBD? Whether school accommodations are brand new to you or something you have experience with, you are not alone. Navigating 504 plans can be challenging, and we’re here to help make this process easier.

Tomorrow night @ 7:00 PM ET on Zoom, we’re hosting an informative session on understanding 504 plans for pediatric IBD patients. This meeting will feature two 504 Plan Coordinators, Amanda Rosetti, Ed. S (K-3) and Christine Willis, B.S.Ed. (High School).

Amanda Rosetti is the parent of a recent high school graduate living with IBD and is a MTSS/504 Coordinator and School Test Coordinator at Saint Martin East Elementary in Ocean Springs, MS. She offers a unique perspective as both a parent and professional on the “ins and outs” of 504 plans. Having navigated the highs and lows of IBD as a caregiver, Amanda is dedicated to ensuring families are aware of their own rights and know what to ask for when trying to support their children in school.

Christine Willis, a colleague of Amanda’s, is a Teacher Support Team Interventionalist at East Central High School in Hurley, MS. She also brings extensive professional experience navigating the complexitities of 504 plans at the secondary level.

IBD friendly meals on the go, can sometimes be a challenge. Let me introduce you to one of my favorite recipes: IBD Friendly Summer Quinoa!

This meal is simple to prepare, not time consuming, easy on the gut, and delicious! 😋

Ingredients:
•1 Cup of Quinoa
•2 Cups of Water
•1 Sweet Bell Pepper
•1 Can of Sliced Black Olives
•½ of a Pomegranate
•½ of a Lemon
•¼ of a Cup of Feta Cheese
•Drizzle of Olive Oil

Recipe: 🧑‍🍳

Cooking the Quinoa
1) Add 1 cup quinoa + 2 cups water in a medium pot.
2)Bring to a boil, cover, and reduce the heat. Simmer for 15 minutes.
3)Remove the pot from the heat and let it sit, covered, for 10 minutes more.
4) Then, remove the lid and fluff with a fork

Prepare the Mix-ins
1) Chop 1 sweet pepper and add to a large bowl.
2) Drain 1 can olives → add to bowl.
3) Chop ½ a pomegranate → add to bowl.

Combine Together
1) Add cooked quinoa to the Mix-ins bowl
2)Drizzle olive oil.
3)Squeeze a half of a lemon into the bowl
4) Add a ¼ of a cup of feta cheese
5) Mix, Store, & Enjoy !
