¡Attention all meat lovers and enthusiasts!

Our time with the Meat Collective has been meaningful and in order to keep moving forward in a more organized and attentive way, we will be moving all classes to Cielito Lindo Farm].

Cielito Lindo Farm is a poultry farm located in the Texas Hill Country, where they will collaborate with partnering farmers to continue offering hand on meat education. Please follow along via Instagram or join the newsletter in the link above!

We are working an an awesome schedule for 2023, that hopefully includes some of our first beef classes! It will all be the same, just a different location on the ole intewebs. Don’t miss out and make sure to give Cielito Lindo Farm] a follow to stay in the loop!

Throwback Monday! (Is that a thing?!)

Here’s an old clip of showing the ropes of sausage making! If you’d like a more in depth and less awkward introduction to sausage making check out our ‘Sausage Making and Butchery Class’ this September. Each student will break down their own pork shoulder or pork leg and then make fresh sausage. Best part is you go home with the fruits of your labor, which is about 30lbs of fresh, handmade sausage!

This fall we are bringing back our Humane Chicken Harvest & Butchery class with in Johnson City, TX. If you have ever wanted to have a true farm to plate experience, here is your chance. We will offer three types of tickets to accommodate everyone’s comfort level- human slaughter & chicken butchery, only chicken butchery and spectator. Last Sunday we held our first new and improved Whole Hog class and… it was SO awesome yall!! Hands down favorite class to teach! We had top notch pork from , a beautiful space and all of the participants were ready to cut which made it even more fun. Everyone also went home with lots of meat for the freezer!

Learn more about whole animal butchery with our Whole Hog class on 4/24! We have a few hands on tickets left, where each participant will butcher and go home with about 30 lbs of pork for their freezer! And we always have spectator tickets for those who want to add something to date night or want to get a better feel for whole animal butchery before they yield the knife!

Good afternoon y’all! We have our first Whole Hog Butchery class coming up on 4/24 and we have *3 spots* left for our hands on portion! This is an awesome class if you went to learn more about meat, responsible farming and whole animal butchery!

This is one of our favorite classes, it’s our OG butchery class, and this year we’re making it even better. Students will be going home with more cuts, roasts, and ground pork AND they will be able to watch a butchery demo on one half of the hog! We did it! First class down and more to come. Yesterday was awesome and it wouldn’t have been possible without , , and the amazing students who attended the class.

The Meat Collective was started out of love for food and a deep appreciation of responsible farming. We’re so excited to (re)start this journey, so stay tuned for some info on our upcoming hog butchery class.

It’s time to meet one of your farmers, y’all. The Meat Collective is happy to introduce Aimee Mick of . Not only is Aimee an amazing cook (see last photo), but she also a loving lamb farmer. Mick Family Farms in located Driftwood, Texas, and they offer the most delightful grass-fed lamb in town! Most of the time, they are selling their lamb in Dripping Springs Farmers Market but lucky for us, participants in our butchery class get an opportunity to have a whole Mick lamb for yourself.

Pictured above we have some marinated lamb ribs, lamb noisette medallions (aka boneless saddle chops) and lamb chops. If you think those sounds delicious, let’s talk about our Whole Lamb Butchery class on March 27th!

Each hands on participant will butcher a whole lamb, then we’ll vacuum seal all the cuts and you’ve got a freezer full of lamb or something to eat for spring celebrations around the corner! During this class we’ll not only talk about the meat you cut, but also the farming practices around it.

Cutting a whole lamb is a great place to start if you’re curious about whole animal butchery. So, check out the link above for more information!
