Amy’s Eggplant recipe.
Ingredients: Tomatoe sauce, ricotta, sliced eggplant, mozzarella, Parmesan.

Take an 8x8 pan coat with 4 oz of tomato sauce then 4 heaping spoons of ricotta add thin sliced eggplant add cheese add spices to taste then add a second layer, garnish with tomatoes.
Place in oven or bbq on a rack cook 350 oven 3/4 heat in a grill cover with foil.
