Caught dad bringing back more sticks, while mom was busy tidying up the nest. We've got TWO happy & healthy osprey chicks in the nest over at French Hermit Oysters! πŸͺΆ And they sure are talkative.

Come by and add Osprey to your Merlin app's life list! ;) Plus an assortment of other birds who are most at home on the bayou. Come and rent a kayak if you want to see some of the more reclusive rails and wrens. πŸ¦β€β¬›

Healthy marshes are doing important work every day.. they're filtering water, reducing erosion, providing habitat, helping protect our communities (doing a lot like of the same work as our oyster reefs!) πŸ¦ͺ

🚨 SOLD OUT! 🚨 - - for TUESDAY, JUNE 2nd. 🚨

Well.. that was fast.

The last sack of French Hermit oysters has officially left the cooler, a bit earlier than expected. We're now SOLD OUT for the day!

Unfortunately we are going to be CLOSING the shop FOR TODAY as we work to alleviate this issue. ;) BUT DON'T WORRY! We have more French Hermit Oysters incoming and will be back open tomorrow, 11am-7pm, business as usual.

Also, a huge thank you to everyone who helped make this happen. πŸ˜‚ Your support of our farm and farmers truly means the world to us.

Most people around Biloxi know the folklore of Jean Guilhot, the famous "π…π«πžπ§πœπ‘ π‡πžπ«π¦π’π­" who called Deer Island home for decades. But fewer know that he was also a dedicated oysterman, cultivating his own private reefs along the south side of the island. πŸ¦ͺ

​Guilhot was fiercely protective of his livelihood, famously chasing off anyone who rowed near the island to poach his beloved bivalves. He harvested his oysters by hand, rowed them across the sound, and sold them directly to local Biloxi markets and residents. That resilience and deep love for the craft is exactly where French Hermit Oysters gets its name!
