Mainstay's Registered Dietitian, Emily LaBombard, says: "Start your day right with a hearty, satisfying breakfast packed with protein, veggies, and flavor. This Breakfast Hash is the perfect balance of comfort and nutrition—and it’s built to keep you energized."

Ingredients (Serves 12):

· 5 lbs potatoes, diced into small cubes
· 2 lbs sausage or bacon, cooked and chopped
· 1 onion, diced
· 2 lbs frozen mixed vegetables
· 3 tbsp oil
· 2 tsp salt
· 1 tsp black pepper
· 1 tbsp garlic powder
· 12 eggs

Instructions:

1. Preheat oven to 400°F and line sheet pans with parchment for easy cleanup.
2. Dice potatoes into evenly sized pieces so they cook uniformly.
3. In a large bowl, toss potatoes with oil, salt, pepper, and garlic powder until fully coated.
4. Spread potatoes in an even layer on sheet pans—avoid overcrowding to ensure crispiness.
5. Roast for 25 minutes, stirring halfway through for even browning.
6. While potatoes cook, sauté diced onion (optional for added flavor) and cook sausage or bacon if not already prepared.
7. Remove potatoes from oven and add cooked meat, onions, and frozen vegetables. Toss everything together directly on the pan.
8. Return to oven and roast for an additional 20 minutes, or until vegetables are tender and potatoes are golden.
9. Cook eggs separately—fried for a classic look or scrambled for easy serving. Keep eggs slightly soft for best texture.
10. Serve about 2 cups of hash per person and top with one egg.

Try this recipe our Malden Residents recently enjoyed!

Mainstay's Registered Dietitian, Emily LaBombard, says, "This comforting soup is loaded with high-quality protein from chicken and tortellini, along with flavorful herbs, tomatoes, and vegetables that add both taste and nourishment. It’s a flexible recipe that can easily be customized to fit different needs and taste preferences. Ingredients can be adjusted based on dietary needs, food sensitivities, or personal preferences—for example using gluten-free pasta, vegetable broth, or different protein options—so everyone can enjoy a warm, satisfying bowl that works best for them."

Tomato Basil Tortellini Soup Recipe

Ingredients:
· 2 Tbsp olive oil
· 1 small onion, finely chopped
· 2 cloves garlic, minced
· 6 cups low sodium chicken or vegetable broth
· 2 cans (14.5 oz each) diced tomatoes
· 1 tsp salt
· ½ tsp black pepper
· 1 tsp dried basil (or Tbsp fresh chopped)
· 1 tsp Italian seasoning
· 12 oz. cheese tortellini or plain pasta
· 2 cups cooked chicken, diced or shredded
· Optional garnish: shredded Parmesan; fresh basil leaves

Directions:
· Heat olive oil in large pot over medium heat
· Sautee onion and garlic for 2-3 minutes until softened
· Add broth, diced tomatoes, salt, pepper, basil and Italian seasoning and bring to a boil
· Reduce heat and simmer 10 minutes
· Add tortellini and cook according to package directions until tender
· Stir in cooked chicken, heat until cooked through
