Here it is! The Food for Thought table will give away a Mini-Journal to anyone who signs up at the table. Use it to collect your recipes, add the resources we provide, and keep all your food-related items in one organized place so you can start cooking effortlessly.
This month, we share recipes about Native American Food. We will also have previous recipe collections available, in case you missed any, including recipes from the start of the Morris Food Justice Initiative in 2023 to today!

F🥕✨ The recipe of the week! Enjoy

Cheesy Cornbread Drop Biscuits
2 cups all-purpose flour,
1 ½ cup yellow cornmeal,
1 tablespoon baking powder,
2 teaspoons garlic powder,
1 ½ teaspoon fine sea salt,
½ teaspoon baking soda,
1 cup sharp cheddar cheese shredded,
2 tablespoons chives chopped,
1 cup buttermilk,
7 tablespoons butter divided and melted,
½ cup honey,
2 eggs

Instructions:
Preheat oven to 400ºF. Line a sheet pan with parchment paper and set aside. Make the Dough: In a mixing bowl, whisk together flour, cornmeal, baking powder, garlic powder, sea salt, and baking soda. Dredge the cheese and chives in this mixture. In another bowl, beat the eggs, then stir in four tablespoons of the melted butter, buttermilk, and honey, until uniform. Fold the wet mixture into the dry mixture until a dough comes together. Use ice cream scoop to scoop dough onto the prepared baking sheet, leaving at least two inches between each scoop. Bake the Biscuits: Transfer pan to oven to bake for 10 minutes or until tops of biscuits are just starting to turn golden brown. Finish and Serve: Brush the tops of each biscuit with remaining melted butter and serve warm.

Answer,
Soul food is so special because they are dishes that bring communities together. Food is very important in the south because it is a huge part of their culture. Food has always brought African-Americans together, even in the past. This is because a lot of activities they do involve creating meals. This includes fishing, which connects to obviously fish but also shrimp which is one of their main dishes. Hunting, which can be many things, including deer. Then cooking is an activity itself that is very important in Southern culture. So all of those examples and the togetherness when eating the food shows how crucial Soul Food is to a big culture.

Chicken Fajita Tray Bake
Ingredients:
1 1/2 tbsp extra virgin olive oil
600g chicken breast stir-fry
40g packet spice mix for fajitas
12 small white corn tortillas
2 green shallots
280g jar Coles Chargrilled Peppers, drained, coarsely chopped
200g tub avocado dip
Crème fraîche, to serve
Fresh coriander sprigs, to serve

Instructions:
Preheat grill on high. Drizzle half of the 1 tbs oil over a baking tray. Place the tray under the grill to heat.
While the oil on the tray is heating, place the chicken in a large bowl. Add the spice mix. Use your hands to toss until chicken is coated.
Once the oil is hot, arrange the chicken mixture in a single layer on the tray. Drizzle over the remaining 1/2 tbs oil. Return the tray to the grill and cook for 3 minutes.
Meanwhile, wrap the tortillas in foil and place under the grill with the chicken. Chop the shallots.
Add the peppers to the tray with the chicken and toss to combine. Return to the grill for 2 minutes or until the chicken is cooked through.
Serve the grilled chicken bake with the warmed tortillas, avocado dip, and crème fraîche, sprinkled with shallot and coriander.
